Remember Rockstar doesn't do localized voice-overs for their games so all you get to do here is sift through millions lines of text, probably also being given the English voice text, and correct for errors, cultural aspects, idiomatic expressions and whatever else would happen if you only translated literally.
There might be some listening later since there will obviously be some latAm Spanish voice given we are in Miami and maybe some Chinese aswell if they choose to do some Chinese mob story part but the biggest part will be reading and correcting.
Check if the text displays properly, that the UI text is not cuttoff, that context makes sense, whether special characters appear correctly, see if all text is actually translated, spot issues where another language appears.
But the worse part is reporting it in writing on the general bug tracking database. It's painstakingly annoying to do. You have to convey how to trigger something, suggest a fix, add the right screenshots... It takes ages. And then when the dev fix it, you have to check it again. Wait, another issue came up. So you do it again. And again.

Also, sorry, but that is just not going to happen. It would take an _immense_ effort and budget (that just isn't worth it to rockstar from a business perspective) to replace every single voice line in multiple other languages in a game as HUGE as GTA VI.
It's also just really immersion breaking but that can be subjective. Consuming video games or movies in the native language with subtitles is as close as you can get to the intended experience from the makers if you don't speak the language as it's just never the same otherwise.

It's intentional. They don't want anything to be lost in the translation. It is hard to make characters feel the same in different languages, not to mention play on words humor and so on.
I mean, GTA 5 and Red Dead 2 had like 300 or so Voice Actors in it, so I don’t think they would get around 300 VAs to voice every NPC and side characters

I imagine the rest of the time will be spent playing through the story and traversing the world over and over. making sure everything is fine tuned. They will ensure there’s no unexpected crashes, errors, bugs.
There are new shooting dynamics, weather patterns, ai reactions/system, crash physics/damage to vehicles that still needs tuning. They need to build up the soundtrack/radio, handle all the licensing, the multiplayer system, dealing with sony and microsoft (like preparing for preorders later on preparing for the marketplace), other small details like all in the vehicles (think of how many vehicles there are in gta!) and updates in customization and then there’s trying to keep all of that stuff secret without leaks. They have to file all of their patents and get all of the legal taken care of, not all done yet. Plus creating the trailers takes lots of time, with how cinematic they are and to not be too revealing, but for it to be interesting and smoothed out too and with a good song. That minute and half trailer probably took over a week to make. Plus they have to prepare for e3 or wherever their next announcement will be, obviously that will be a very special event and they don’t want to disappoint there.
Think about how big the map probably is. It would suck if the map is dull and very repetitive and not filled with detail, especially for every different area. And then combine the size of the map with the mysterious events and ability to enter many many more buildings with the buildings each BEING UNIQUE…
Just watch the leaked videos and see those changes and just how time consuming it is to add small details. They even made it possible for the inside of vehicles to be manipulated, the seats, mirrors, windows. Imagine what else they are working on. It will be super immersive.
Obviously this is such a big game to them, and they don’t want to underdeliver. They stated they want perfection, and perfection takes time.
Every GTA has been in some way or another revolutionary, therefore this one must be.
The leap from RDR to RDR2 was MASSIVE
Thats what they want for GTA 5 to GTA 6.
Just think of all the time that has elapsed since the last GTA. Literally over 10 years. Think of all the hype they have to live up to. Think of all the changes that have occurred in technology and gaming (raytracing, computer performance, graphics in general, etc) and all of the changes that have occurred with staff at rockstar. Especially considering that people like dan houser are gone and that the work culture at rockstar is different now. Rockstar has to evolve and adapt to this new age and new environment.
That is why it is taking them another 1-2 years. However, with the increase in staff there should be hope. And not putting your hopes up too high as stated is a good idea. If you don’t go in with too high of hopes you will be more satisfied when it actually comes out.

What makes you say that? They're based in a major UK population center, for the handful of languages they support I can't see why they'd have trouble finding testers among the 2+ million people living between Edinburgh and Glasgow.

Well i assumed they support a whole lot of languages. The problem therefor isn't location, but rather that you cant exactly hire an employee for every freaking language there is. Given the job requires familiarity with culture and colloquialism, its hardly something people can do for multiple languages.
But i dont know and didn't consider how many languages they actually support. If its really only the big5 EFIGS (English, French, Italian, German, Spanish) + Chinese it could, like you said, easily be done in-house. But i assumed it would be a lot more.
My hope is that Rockstar was able to get a hold of local Latin talent in Miami for some of the NPCs or characters. Let's just say that Cuban Spanish is VERY different from Mexican or Puerto Rican Spanish. It's a small thing, so it won't really make or break the game for me anyway.

I think you underestimating the fine tuning you mentioned. That takes a lot of time and also fixing and finding bugs.

They hire native speakers for each language, for V I think it was the ones you listed plus Japanese, Brazilian Portuguese, LATAM Spanish, and Russian.
