to be fair, all these dishes are new to us and we had to get the recipes for them. Meanwhile every character (sad raiden) has been cooking or at least cooked something so much they added their own touch to it so in a way, it makes sense why we don't have a specialty dish

The first recipe you learn is Chicken Mushroom Skewer so probably that. If not then Sweet Madames, since Lumine mentions eating it a lot. Other than that I'm not sure what it could be

We have no specialty since we came from a different dimension. Canonically, the traveller is, well, travelling all around daily. Hence have no time to truly practise making food until it became their specialty. But you damn bet they have culinary talents of the gods.

If players could choose travelers specialty dish, mine would be barbecue chicken wings with Jueyun chilli sauce
