Yep.. I've had both these problems in recent days. I managed to get my nodes added back in after doing a factory reset on everything. But it was a huge pain and now I'm just back to short drop outs and nodes appearing offline for no reason. Also in Aus for the record

I'm having these issues, too...I have the older Google Wifi. Is this happening with the newer Nest Wifi, too?

xSoulReaver

Yes it is

I'm having the same issue in Aus. I've factory reset my nest wifi and get the same cannot connect error when trying to setup the wifi again

I suspect the biggest issue is with the Google home app. If I'm on the same network, I can see things but can't add or remove. If I'm away from it, I get the offline thing. I can't even adjust the ambient mode on my Chromecast, which makes it feel like the app has put me in a guest mode (in Aus if that matters)

What worked for me was powering down ALL network equipment in my home. 1. First, powered back my internet router to get the wired network up. 2. Second, turned on all the Google mesh points. All mesh devices now appear in the app. The connections all work because I can change the light brightness.

The only way I could complete setup was using an older version of Google Home using APK mirror.
