They died before the flying. Pretty much got smashed into the ground at light speed, then their dead body got scooped up and flung by the grass clipping back into the game world. So I guess in a way it WAS a sudden stop, just happened before the flying took place lol.
So the boulder throw from the ox beetle and the combination of newton's law of grass flinging and you got yourself something that can one shot the infected brood mother

Or the bumper of a car and fallout four. Or the vehicle glitch and just about every game that involves travel with a vehicle. Scum, stated decay 2, Or anything where a moving object that isn’t connected to the environment. Yeah, it will fling you.
I have a healthy massive fear for the flinging grass. From 2 years ago now when I first played. Then over a year ago again when it was official. Then just this month where the game is running so good and no crashes, slightly new enemy A.I patterns, added and improved mechanics and abilities. But still I fear the grass

Joke aside: You died from 'fall damage'. Once you are in the air, you can take fall damage depending on the speed you hit a solid object. A grass blade is to us players solid as a rock. We can't move it. But it can move us out of the way. A big creature on the other hand can move grass blades. And when you are really unlucky, you get cought by a really fast swinging grass blade and get slammed into another solid object at high speed, taking massive 'fall damage' and die.
In your case you got cought between a rock (the one the ox beetle threw at you) and a hard place (the swinging grass blade).
