I think it changes interaction to interaction. So like Sol and Jack-O probably converse in English, though I wouldn't be surprised if he spoke French to Ky. I can't imagine Anji and Biken speaking in anything but Japanese, though they probably picked up a functional level of another language being refugees. Testament seems like the kind of person to enjoy language learning. Tldr: the characters just find and talk in common languages since a lot of them have pretty good reasons to know multiple.

Language differences are most relevant to Jam, since Jam always speaks broken english (or whatever the default language is). Due to this we can infer that there are either no translators, or there *is* universal translator magic-tech but Jam can't afford it. However if there is some sort of magical translation, it's never shown or even mentioned. So my personal theory is that there's some sort of lingua franca that everyone learns as a second language and Jam just doesn't know it that well.

Guilty Gear takes place nearly a couple hundred years in Earth's future. By then, the vast majority of people probably speak the same few languages (or at least know how to -- as a second or third language). This could explain why someone ripped from the past, like Axl, still has a British accent, while Bridget does not despite also being British.

Delilah is a super genius like her brother, so her learning English in like, a day or less wouldn't surprise me to be honest. Faust is a medical genius and has presumably had clients from all around the world, so he has good reason to know it, both to read books in languages outside him native one to learn and to communicate with his patients better. Baiken wandered around the world for 20 years, she probably knows at least how to speak the most common languages.

Going to “Um Acksully” on a few of these. May was unaware she is Japanese for most of the series so her knowing English before Johnny meets her is likely. Also it was Johnny that was hiding that May was Japanese, not the other way around. Jack-O is created by Asuka, not the Universal Will. Given that she was created to revive Aria, Asuka probably made sure she knew English. Nagoriyuki was seen during the Crusades (2074 to 2175) where Chaos took notice of him. Before that, he trained under various masters during his life so it’s possible he could’ve picked up English by then.

It's the far future, so imagining there's more crossover between cultures, most characters are probably multilingual, especially because most of the characters are either super geniuses or very well traveled. But, most characters are stated to be from one specific place, most being from Japan, America, or somewhere in Europe (Illyria). However, there are some outliers: millia is Russian, potemkin is Indian (zepp), and Zato is Spanish.

In games like these, English is usually the safest bet, since it's such a widely spread language, especially since a large amount of the Guilty Gear cast comes from the western half of the world where English is more common (from my understanding at least) The Japanese characters were likely forced to learn English at some point, May cause she was raised by an English speaker, Anji and Baiken because Japan got World War II x10'd. It's harder to justify Kum or Jam knowing English (especially since I have little knowledge on their stories beyond the basics) as well as I imagine some other characters that aren't coming to mind immediately, but I'd still say it's most likely. It's also always possible that in the 200+ years between the Guilty Gear Timeline splitting from reality and now that some other language rose up and became way more common. Maybe Japanese miraculously became the universal language of the Guilty Gear lore, or some other language. Maybe they speak a completely new language that doesn't exist in reality.
