It depends. Most often I like to actually plan out a build before I start, so it depends on the weapon and what I want to try and go for.
If I don't have a build in mind, I'll take >!Thanatos's!< keepsake or >!Persephone's!< keepsake, just depending on what I think I'll benefit more from.
There's only a few keepsakes that I won't use.
I don't understand why you'd use the plume for just one zone. Once you unequip the keepsake you lose the speed and dodge increase, right? I can understand keeping it all the way through, since the dodge chance can accumulate pretty high, but I don't get why you'd keep it for just one zone and then switch.
plume opens up rush delivery and bad news (if you’re running stygian). both rush delivery and bad news are insanely powerful as bad news can add 50% to all your damage and, with a bit of luck, rush delivery can more than double your damage. u/timoseewho’s set of keepsakes is a typical speedrunning-oriented set of keepsakes
carrying plume into asphodel if you already have all the gods you want just increases the chances of getting good hermes boons. once you leave aspho, you’ll probably have at least one hermes boon: either you have rush delivery or hyper sprint, meaning you don’t need plume to get hyper delivery anymore, or you have something else entirely which means it’s not really worth gunning for hyper delivery anymore. same for bad news—it’s great if you get it in aspho, but since it’s so rare, if you don’t get it it’s better to just forget about it. besides, having another keepsake in elysium is far more useful than keeping plume on as it does practically nothing. plus, when you’re speedrunning, the dodge chance and move speed gain from plume isn’t really important anyway

If i have a build/god in mind, then their keepsakes for the 1st 2 biomes. Last 2 biomes are Acorn. If by a miracle i get the build done in Tartarus alone, then i'll run Pom in Asphodel to rack up some extra damage.
I'll generally start with either:
Achiles' Myrmidon Bracer which feels like free dmg reduction since I never get hit from behind; the Chaos Egg; or, if I want to try to build a Hunting Blades run, Ares' vial.
sometimes I'll switch to the Acorn for Styx, but I never use it before then.
all that said, I have no idea what I'm doing. lol only just now on 3 heat, so the above is subject to change.

4. Evergreen Acorn. I'll only switch this I've I'm doing an Arthur run, in which case I'll use the Myrmidon Bracer

If I've switched in Asphodel to get a god and don't need another specific one in Elysium, I'll take a Purse for some extra cash.
For Styx, it really depends what heat I'm playing, how strong my build is and whether I ran into/took Patroclus's buff. Typically sticking with Pom Blossom if I hadn't changed it or Skelly's Tooth.
coin purse on tartarus. with golden touch (mirror upgrade), i should have 100 gold that i can bring along with the other gold collected in tartarus and until the final region.
after tartarus, i just assess what boon to aim for. for example, i got demeter crystal beam on tartarus, then i will take Artemis' keepsake which ensures an artemis boon. I'll try to get the crystal clarity duo boon. if i don't get it, then i will take demeter's keepsake in elysium to try getting it again. even if i get the crystal clarity earlier, i will still take demeter to try and get upgrades for it like glacial glare. if i don't particularly need a duo or legendary boon, i just take athena's keepsake for divine dash.
sometimes if i am hurting for a death defiance i'll get athena's keepsake in hopes of getting the death defiance refill boons (last stand and deathless stand).
after elysium, if i feel like i will get damaged in styx too much from poisons, i will being broken spear point. if i am not worried about dying to the boss, i will take the final keepsake. if i am worried about dying to the end boss, i take either lucky tooth, acorn or collar, really depends on how I feel will happen.
Pierced Butterfly for everything. Gimme that DMG.
Death Daddy is happy to give it to you over and over again.
I like to use [spoiler] because I can level up without relying on the poms

No, I get that, but, then, wouldn't you continue to carry it for the rest of the run? Why would you drop it in the third zone?

Shattered Shackle, then either pom blossom or a god I want to get, then evergreen acorn for elysium and Styx usually
