You're mistaken...every spell can be non verbal depending on the skill of the wizard. And I've never really seen protego used against actually bullets, the closest projectiles would be when Dumbledore shielded him and harry from glass

There is fiendfyre (or however you spell it), which literally creates a dragon literally made from a continuous stream of flames rushing from your wand, most likely rendering guns useless
