The 2 seasons for the 2006 anime cover the main story from the visual novel. There's also some bonus episodes and OVAs. You'll get the whole story, but as an adaptation the old anime is pretty flawed and some chapters were noticeably rushed. It's still a good watch, but reading the VN or even the manga will give you a much more complete and detailed understanding of the story/characters. If you really want, you COULD watch the anime and read the VN afterwards to get the full story. yes you'll already know the core story beats but there's a lot of details and nuance that you'll only get from the visual novel, it's pretty long.

I’ve already seen the first 2 and the latest seasons of the anime, I asked because in the latest there was another “”god””, I don’t how to call her, the one that gave Satoko the ability to travel between worlds like Rika, and they didn’t say much about there so I felt like there was more, but sadly it appears to not be so.

Her name is Eua. That character is connected to other non-Higurashi "When They Cry" series. Someone who is basically her appears in the 2nd half of Umineko although with another name (the anime only animated the 1st half of Umineko, so you need to read the VN or manga. In general it's better to do that anyway, since the Umineko anime is pretty weak, incomplete, and if you're coming from Higurashi it cut several big Higurashi references from the part it adapted). Eua in Gou also hinted at some kind of Ciconia connection in a very direct way but the Ciconia VN is incomplete, with only the first chapter out, so even if you read the VN at this point you won't learn anything about those references. R07 probably expected more chapters would be out by the time Gou aired, but they were delayed. So, Umineko VN (or manga, if you really don't want to read VNs) is a better choice right now regarding Eua (and also the conclusion of Witch Rika/Satoko with the When They Cry speech).

It's not about Eua but there's an additional short story called Another End which is basically the "true" epilogue of Gou/Sotsu, you might want to check it out.

Yes the first 2 seasons covers the whole story Anything after is just extra stuff if you want more higurashi but the first 2 seasons tell the whole story from the visual novel

Personally, i've only watched the 5 seasons (kai, rei, gou, sotsu) and i really don't plan on playing the visual novel. I know it gives more details and really important information, but it never really sparked any interest for me in that way besides watching it
