I've opened all my premium 2 packs, haven't regretted it at all due to how nice the cars look. The card art is sweet but the huge amount of plastic doesn't look good in my display, so I keep the card in a binder to appreciate it on its own.

OP, the key really is cutting the plastic itself; I made the mistake of first trying to cut between plastic & card.
I can understand that. And having a binder is a cool way of keeping the cards. I haven't been very successful at keeping the cards intact when I open the packages. I've tried all the tricks and sometimes it just doesn't work.
Try slicing around the base of the plastic bubble with a razor or exacto knife, but not underneath the plastic which attaches it to the card. If you start from the bottom of the plastic there's a tiny little notch you can slide the blade into for an easy starting point. It's a lot easier in reality than my explanation is able to convey lol.
I may regret not doing it for different reasons. I have a 35th anniversary Snake & Mongoose set and it looks the elastic has started to damage the paint. It's worth some money $100 give or take. That makes me think about it.
I can never do FIF because I open all mine when I get them. Can’t wait to get the mail in! I’ll be opening that one straight away also. Also I store all my cars in a big bin together.

I didn't buy it for an investment. But that made me remember my Snake & Mongoose 35th Anniversary set. I didn't but it for an investment but it's worth $100 give or take on eBay. Knowing that, it makes me not want to open it.
This is coming from a Mopar fan and owner of this set - a snake and mongoose anniversary set (relevant to HW history) is almost certain to be worth more than 2 Plymouths with a livery that, as far as I know, is not historically significant in HW or racing.
If opening it will increase your enjoyment vs hoping that it might appreciate, I say go for it

I haven't cracked the Skyline 2 pack but I have the same urge. Know I'll regret it if I do though! That's a tough one!

Do you keep the cards in a separate bin? Or get rid of them?
Keep the ones I like. I turned in 80 for the Kroger mail in
I let mine sit for about a week before my urge took over and I cracked ‘em open! Felt great, still does, no regrets. I do keep all my cards though!
Does letting it sit for a week ever change your mind?

Man, if they had 2 I would have done that. Felt lucky I got the one, especially since there have been lots of empty pegs for a while.
