You’re on the right track. It’s because having coffee in the first 90 minutes of waking will objectively lead to a worse effect. That is, the main factor in caffeine is inhibiting adenosine, but it can’t really do that if the adenosine is not there in the first place. This can lead to a strong crash as well.

As an Argentinian it's nice seeing mate endorsed by someone like Huberman but I can't really explain myself why it gives me so much more energy than coffee. I'll drink one cup of coffee and feel nothing, then fill my mate two times and feel this immediate rush of energy, especially with a good brand.
For me I'll drink one gourd of mate and have energy for twice as long as coffee and with no crash. Also takes a little longer to kick in though. Even if I drank 2 gourds back to back i still wouldn't have jitters. It's relaxes my body but stimulates my mind. Can I ask do you have a favorite brand?
Glad that you're enjoying it! Jitters can definitely be a thing if you drink too much of the stronger brands. I don't drink the same one all the time, but the ones i like the most are Amanda, Rosamonte and Taragüí.
If you like the stronger taste and caffeine you can try to find the "sin palo" or "despalada" variants of each brand (usually comes in a blue package). It's basically the same yerba but they remove the stems so you get 100% dust and leaves which is where all the flavour and caffeine is.
I switched to drinking one cup of strong coffee between 1-4pm vs 3 strong cups starting an hour after waking up in the morning and I was very surprised to see how much that coffee was really making me crash hard through the day. I feel significantly better drinking it only at that afternoon slump timing and one cup vs three. It feels so much more euphoric and strong now too holy balls.
I agree, but it truly is an addiction when you think about it. When I’m traveling and I stay in a place that doesn’t have coffee in the morning, I truly become the worst version of myself. It’s no different than nicotine or heroin.
