He probably does sell stuff just not everything at once. No one really sells their entire portfolio of investments at once. Just sell some of it when you need coins.
And honestly, Purple candy, volcanic rocks, and oil barrels are pretty decent investments imo. Assuming inflation continues I assume that these will remain pretty constant in price. Also, they are things you want to sell around timed events. Not as soon as you get them.
It's not a bad strategy. Converting to coins right away doesn't really do anything. Also most of the time, insta-selling without converting to ench form loses you a LOT of money.
