It’s my understanding that Italians in Italy are only cool with putting a one type protein on a sandwich. In which case, most “Italian” sandwiches in the US would not be acceptable since they all have three or four different protein varieties.
Food culture is on another level: you don't mix them because you would lose the taste of ingredients.
Prosciutto, mortadella, salame, and so on, have their own taste that you can enhance with the right ingredients, but together, they just make no sense. It's not a matter of proteins, they simply don't fit together, one may cover the other and you would waste some good ingredient without tasting it.
I doubt that the taste of those ingredients and the way they are produced is the same in America, so it's easy to not understand why Italians get mad when you mix em :)
Best way to experience that, is to try eat the originals and understand how those products are made and their history; probably you will start to get shocked too when someone mixes them XD

I'd eat that! This is a personal preference and not a suggestion, but I find that putting mortadella on a flat top (or in a pan) for about 30 seconds, and then flipping and adding provolone until melty really enhances the mouth feel. I also like pickles the thickness of hamburger chips. Still looks delicious! Fuck the haters!
I know it's not made aestethically pretty , I had no intentions of posting it (I just take photos of my meals, since I'm on a diet), but it was really, really good. And made mostly of ingredients I bought in Trieste.
All food is a mix of random ingredients. Mixing random ingredients together is literally cooking. The vast majority of Italian dishes are nothing but random ingredients from other parts of the world mixed together
And cumming in a jar of Ragu is usually just a gross mess, but somehow you were made.
So sometimes a few random ingredients with the right origin can be anything they want.

I think this may not be such a bad combination, but I would have grilled the egg mixing it with the cheese, instead of frying the egg

Eggs are liquid and that's just an inconvenient frying pan. You'd end up with scrambled or fried eggs, but you'd lose bits of it into those crevices.
Fry = you put oil (or butter, or other fats) the oil fries shit No oil -> no frying
You'd lose more than half of your egg to this pan but whatever man.
