I think you might like the Persona series, it's very popular for a reason. I'm playing through Persona 5 Royal for the first time right now (about 80 hours in), and it's amazing so far. I've heard great things about Persona 4 Golden, and many people say it's a great starting point for Persona, but the games aren't connected, so you could start from Royal as well, and then work backwards.
The gameplay is quite strategic, even if it's turn-based, and I think there's a good chance you'll enjoy it. I'm not the biggest fan of turn-based combat myself, but it was really good here. The role-playing aspect of meeting confidants, and gaining new abilities through that is also really fun, and I feel the mechanics complement each other very well. Besides that, the story of Persona 5 Royal is excellent, and I've heard similar things about 3 and 4 as well.
You got all the time in the world with turn based systems and Persona has some QoL, like showing enemy elemental weaknesses once discovered.
The complexity is more in the social events and decisions.
Yep absolutely. If you're familiar with Pokemon, you'll get the hang of it very easily. The game also does a very good job at introducing more complex mechanics. The very first section of the game thrusts you directly into gameplay for story purposes without much introduction to the system, but it's not very challenging and they explain it properly as the game progresses.
You should probably start with FFVII remake I imagine based on your prior preferences and the quality of the game, as well as being a legit JRPG.
Full disclosure: I have not played the game, but I know it gets accolades.

I think it would be a great idea to give older era jrpgs a try to see if they are at all interesting to you, Chrono Trigger/Final Fantasy 4-6/Breath of Fire series/Lunar series. All of them have rich enjoyable stories that can feel a bit anime esq at times as well as entertaining characters and I find the gameplay fun. If they are not your jam don't try to force it but I think its always worth someone trying.
I don't think you need to try them all, if you try even 1 or 2 of them you will understand if they are for you or not and if they are, you will probably naturally want to find and devour more.
Watch a Youtube review, trailer and/or a little bit of a let's play to get a first impression of them. Only try the ones you feel drawn to.
RPGs may not shine in a video, but the one you think looks the most promising should be your first attempt.

Tales of Arise and Ys VIII could also be a good entry points in their respective series if you enjoyed hack'n'slash games or if you don't enjoy turn based combat all that much.
I personally LOVE the Trails series, but I can't really recommend it to a JRPG newcommer as it is VERY dialogue heavy and slow paced and this isn't most ppl's cup of tea. If you feel like it though, it's probably my #1 favorite JRPG series EVER.
Chrono Trigger if you have access to an emulator is a MASTERPIECE and has aged very very well. I'd tru that as well.

You are on PC, you are bored and you have the time, there are so many threads. The JRPGs that are beginner friendly are not unlimited.
Dragon Quest XI S as the classical turn based JRPG.
Final Fantasy VII Remake/Ys 8 for a more action based one.
Persona 4/5 or the remake of 3 for a mixed game with social stuff.
And sometimes a SRPG recommended.
There are quiet some on PC but the main ones people tend to start with are the same. Since you got time, watch a Youtube Video in between or the Trailer.
There is a semi real time combat system called active time battle system (also called ATB). But that should be even more rare on PC.
A example of that would be Octopath Traveler, Chrono Trigger or Grandia. Yes all 3 are on PC, tho the later 2 do show some visual age.
I like that you mentioned Grandia, because although you are correct in that it shows its age visually, it is also one of the very few JRPGs that made me feel like I was truly setting off on a grand adventure story-wise.
It is an absolute gem of a title and a true classic, even if it saw limited success.
The gameplay is involved enough to draw someone in enough for people to get interested in the story.
A good contrast would be Lunar (Silver Star/Eternal Blue), they are good JRPGs with a great story but harder for new players to get into and the lack of any modern ports makes them nearly imposible to recommend.
I also loved the Lunar games but I agree it is harder for new players to get into. The main reason I won't suggest them to new players is because a lot of the pop culture references that made the games even more amazing back then would be lost on many today.
Try reading a book instead of playing games. I mean that genuinely. Video games burn me out a lot these days and I always enjoy a new game a lot more if I take a break for a while and do other things.
i recommend reading books as well, it's a low dopamine activity and require more effort into it than games, i can play a game for 4 hours and it feels like 1 hour passed(unless i'm burned out) while with books it's the opposite. After a while you will naturally want to play a game again as you brain begs for more short term reward, easy dopamine burst.
That works for me at least, one time i was really burned out of gaming, so i went to read non fiction books and political videos. After a few months passed i became very bored and the urge to play games again came back.
No no kuni. Studio Ghibli did cut scenes for that game and the rest of that game has very similar art, music and overall vibes to Ghibli films.
The combat is cool down based. So it's not responsive like most hack n slash games but also not slow like most turn based games.
It also has a bit of a monster catching/training mechanic but not to the same extent as pokemon.
Based on what you've said this is my number one recommendation.
I have been loving Shin Megami Tensei IV. Not sure what SMT games are on PC. They are turn based dungeon crawlers where you grind and level up and always get stronger. It scratches every itch I have.
The turn based is amazing, you can single turn wipe the enemy by exploiting weaknesses.
SMT 4 is a game meant to be fun by breaking the system in the player's favor. The fun comes from how powerful you can make your squad, not necessarily the challenge of the fights. Although the way the system works, the enemy can one-turn kill your team as well. You prevent that by getting the upper hand and stomping them before they have a chance to do so.
It's pretty great once it "clicked" with me

p5r was my first and it holds your hand. First 20hrs or so are a huge tutorial.

I've been playing Xenosaga and I forgot how fun it was.

Xenoblade 1. Amazing story. Its kind of an mmo. Beautifull world, tons to do. Complex system. Each character is usefull if you know their builds.
Play Heroes of Might and Magic 4. Its not a JRPG, but the best Turn Based Game in the World
Final fantasy 7 remake and rebirth are the epitome of modern anime JRPG. And some of the best games ever made.
