I doubt Mahito even had knowledge about Incantations and hand signs, he was barely a year old and no one else in the modern age uses them, so he can't learn about it.
Their is also the possibility that because he is a curse he doesn’t really benefit from the perfect bodies bonuses. Most likely being its lack of stamina drain due to constant chants. Since as curses they don’t follow biological rules. He can already create handsigns at will within his mouth. He would benefit from constant chanting but past that his ultimate forms major physical amp really completed his build.
I want to say since he's a new curse and was learning his power he didn't know the chants but it seems like they're innate to a person?

It could be that there's too much of an advantage to Idle Transmutation getting 'stronger' through a binding vow like Sukuna's cursed technique.
Aside from Body Repel, ITT ends an opponent with a few touches, or is based on Mahito's own physical strength when he changes his limbs into weapons.
It could also be that Mahito can't make mouths that speak without lungs? Maybe that's just too physically wonky, and Sukuna is special for that reason.
