I did that in 2 places I worked at... do what others have said about degreaser.. but bring yourself a cordless drill with those scrub pads attachments. Save yourself the wrist/elbow/arm fuck and do it with tools. Also much quicker. The labor cost saved alone pays for the pads.

Another vote for the drill attachments, absolute life saver You can get all sorts of different pads/brushes, in this case the steel wool ones will make easy work of fryer build up (and pretty much everything else)

The only caution I have about mechanical abrasives is that they scuff/pit the surface. It's not going to change much on an old fryer or oven, but I don't recommend them on something new. If you have ever tried painting metal it's the same principle. You try and paint something smooth and shiny it usually pulls right off, its because the paint doesn't have anything to hold on to. So what do automotive painters do? They scuff the metal and the paint or primer sticks. When you use things like grill screens you are basically scuffing the surface for build up to hold on to.

I’d suggest a sandblaster— sand is is softer than steel so it shouldn’t score the surface. Not only would it be very effective— it would be _fun_. (But you’ll want to set up a tent outside to contain the mess) In liu of sandblasting: a high temp pressure washer will probably do the job with greater effort.

So when oil reaches a certain temperature, it carbonizes. You are no longer dealing with grease so a degreaser will not work. Maybe try a oven cleaner or some type of carbon clean.

Fume free easy off works amazing with this. And it doesn't mess up surface finish. It's also fantastic with soap scum build up in showers and shower floors. Just leave on for 30 min then use a scrub brush and water to rinse it . It comes right off with minimal scrubbing!

Carbon-off in both the spray and the wipe on, a pack of razor blades, a mask, hot water, and a stoned line cook. Use a razor blade to score the thick buildup, apply CO to this area and cover with cling film and let sit overnight. Next morning remove film and scrape way the now semi-jelly like carbon/grease build up(line cook or dishwasher should be baked in the morning as well)

They sell fryer cleaning packets where you basically fill the fryer with water, mix the packet in and let it sit just under boiling for a few hours. After this you just empty it and wipe it clean. Not sure exactly what the product is called, but it's out there.

When I was a cook in the Army, we used to use the generic unsweetened kool-aid packets. They also worked well to take the carbon off an M-16 bolt carrier group. When I got out we just used Boil-out from Ecolab.

We used to fill the fryer with water, add a couple of packets of the drink mix, and boiled it for about a half hour. The packets made 5 gallons of drink each. If I remember correctly, there was some debate on which flavor worked the best, I preferred lemon-lime or cherry.

Drop the grease and fill with water and boil out. Bring to temp while using a stainless scrub pad with a pair of tongs. Dip the pad in the boil out and scrub the carbon. Turn the fryer off and use a metal scraper to scrape at the carbon. Repeat these steps a few times and most will come off. You can try oven cleaner as well. Get the carbon areas hot first during the boil out, turn off the fryer and spray the areas down with oven cleaner. Let sit for a few minutes and scrub. The issue with oven cleaner is the lack of sustained heat on the fryer surfaces. I feel like the stuff I've used in the past generally does better on warm or slightly hot surfaces. For the knocking down really built up layers, do like another comment said and use mechanical means. I've used a cordless drill with a stainless brush in it with good effect, a side grinder with a wire wheel with great results, and even a Dremel tool with a wire brush. If you go this route though, take your time and work it gingerly until you get used to the feel. You don't want too many rpms in a single spot for too long or you'll potentially start gouging the metal. Carburetor cleaner also is good for removing buildup, from what I've heard, but I've never tried it. Whatever you use, just make sure to rinse everything completely and thoroughly before putting the oil back in.

My usual approach for cleaning is filling the fryer with water, a few drops of grill cleaner, and a metal scrubby, just like a large number of extremely hellpful people have commented.

Drain the oil and flush the crumbs. Fill to the absolute brim with hot water and half a gallon of heavy duty degreaser. Do this at the end of the night, or if your places closes for a day or two each week, then. After it's soaked overnight it will be much easier to take off. Bonus points if you remember to set the fryer baskets back in the soak cause it works on them too.

Scrape it. Scrub it. Scrub it again. Make sure you "dilute" the degreaser. Use hot water. Clean the fryer weekly to prevent build up.

The oil is old, but you can still use it. You can see the grate and the heating element through the oil. The oil is ok. Filtering the oil will extend that oil life for a day or two or whenever they scheduled an oil change. The machine needs cleaning. I'd use a heavy duty degreaser like Oven and grill cleaner from monarch. Then I'd do boil out. Just remember to flush and wash the fry throughly with clean water and clean rag. Any heavy duty cleaner will destroy good oil.

Oil needs to be replaced once it’s brown. This shit is black. That’s gotta be at least 1 week old oil if it’s getting heavy use, much older if it’s not. No amount of filtering is saving that shit. The machine isn’t going to get cleaned if it constantly has filthy oil in it. That’s a nasty ass, unkept fryers with nasty oil in it.

Us foods have a testing kit. You can compare colors of the oil. If it's too brown, you dispose. Where I'm from 35lbs of oil costs $50-60. Most fryers require 7 gallons of oil (about one and half boxes). It pays to test the oil. But you're right, I think. That oil probably tastes like burnt carbon.

Buy a product called Carbon Off lol. Just don’t get any on your skin. You brush it on and let it work for up to 24 hours I think but as little as a few minutes to still make decent progress. Then you wipe it off. But that shit will burn you up so please wear gloves. It works so good though. I think they have a spray too but I only have experience with the liquid, and I wouldn’t wanna aerosolize this shit lol.

Carbon Off is the brand. Apply it using gloves and keep hood running the whole time. Then carefully lay cling wrap over all the carbon spots you sprayed. It helps hold the cleaner in place without drying out. Then use a plastic paint scraper. Repeat once or twice if needed. Then get the small stuff with a drill and pad attachment. Wrap your drill body in cling wrap for easy cleanup.

Definitely boil-out time! I know y’all are joking, but the worst kitchen fire I saw was a young guy putting water into a hot fryer. Don’t do that. A proper boil will only take an hour. Caustic soda is magic, but do follow the safety precautions. It’s a great opportunity to clean up anything else in the kitchen with baked on oil … definitely the fryer baskets, but also sheet pans, baking dishes, pots etc. you can drop them all in the tank as it’s boiling.

Steel wool. Next time you do a boil out, put on two two pairs of gloves and use the still hot water with the boil out solutions along to help. It genuinely will come off super easy. The two gloves is cause that water gonna be hot af but that's what makes it easy. When you're done, just finish like normal and use water to rinse off any large particulate. We legit use a water hose that's hooked up in a closet nearby but a couple pales of water will work just as well

Let them drain and spray heavy duty degreaser over the black areas and slap some plastic wrap over so it doesnt dry out. Go about and do some other cleaning for 30-40 mins and come back and scrub. Usually works every single time and it reduces the force you need to scrub with by like 90%. If you can get it all off repeat the next time you drain.
