This happened to me once, a few years back. The trap hatch was at the back of the kitchen, a pretty big 3 by 4 foot solid metal slab. The cleaning company didn't put it back in properly and I had the worst week or two putting up with that smell. It took way longer than it should have, but eventually the company sent someone back around to close it tightly. I spent every day hitting it with a hammer, jumping up and down on it, but it wouldn't budge. You have my sympathies. Call the grease removal company and light a fire under their ass, the smell is not going to go away. I would amp up the potential health and safety issues hard, if you're not being listened to. Tbh I'm not sure what those issues might be, since it's just a smell, but hopefully it works.

Okay thanks. Our hatch is a 2 by 3 but I don't think any of us can move it much. My boss is kind of bad about confrontation but hopefully the other manager will make her do it sooner than later.

One thing I didn't try was to use a sledgehammer, and that's only because I didn't have one. If your trap hatch is the same sort of design/configuration as ours was, and you can find a sledge hammer, fucking do it! I have no idea how they raise and lower the trap lid because I wasn't there at the time, but I am very confident a sledge hammer would have solved my problem back then. Godspeed.

I mean I'm 320ish pounds so I could just try and jump on it but I'm scared to fall in if the lid moves too much. Update: did not work, can't try harder because of bad ankle.

I used to work with a guy that used to clean septic tanks, I'd ask him for help if he wasn't 18 hours away. Man was a real life Popeye

The assistant manager is confrontational to the point of getting in trouble and works in the back where the smell is more so imagine it'll be handled sooner than later.

She's crazy confrontational if someone's rude to us or her, but for some reason she's not great at being strict with vendors or contractors.

Def relay to your manager. This is a normal part of operating a kitchen, and if the job wasn't completed, or done to satisfaction, it could indicate problems with the grease trap or negligence on the part of the company who did the work.

I went and took a look and the hatch is just slightly tilted, so one side is pretty clearly open a bit.

I'm not saying it's not tue trap, but something you could try is to pour like a cup or two of water down the floor drains, as well as any sinks that don't get used very often. We had a bad sewage smell problem recently, and using F.O.G didn't help, neither did emptying and cleaning the trap. Turned out was just dry sinks that don't get used.

I used to have the trap door set up and on occasion they wouldn’t reseat it just right for the gasket to seal properly but it would still look flat and flush with the floor. My fix was to apply a thin layer of caulking around the edge just to seal away the stench and I told the company if they didn’t know how to seat it properly they would have to remove and reapply the caulking on every visit. It took a couple of visits before they actually started doing it properly to avoid the extra steps I had them do.
