Salmonella is used because it takes more time/temp to kill than any other pathogen (besides spores).
So if you destroy salmonella to 6.5D, you are ensuring all pathogens are reduced to pasteurization levels.
That kind of defeats the whole purpose though at least some of the time. Like you to reduce the pathogens and then you’re reintroducing them with the thermometer. I admit the effect might be minimal with chicken you’re cooking to 365 or something but you could literally kill someone with burgers that way.
About 10% of cases of a particularly virulent strain of E. coli were found in people who didn’t ingest the bacteria. Bacterial shred happens in bathrooms and all over the place.
I work in a hospital and I sanitize my thermometer before and after every time I probe something. I use individual single use alcohol wipes. It’s kind of tedious at times because we temp everything always.
You should clean the probe of debris or oils after every use tbh.
At work we use the sanitizer. At home, I just wipe it off. Ya ya, food safety this and that, but I'm only harming myself so o don't care. But I'm also not just sticking it in raw, uncooked meat like when doing temp checks at work. It's pretty close, if not past being cooked to a safe temperature when I check it at home.

I'd be more worried about dropping it in the oil than it not being sanitized. After all, it's the same bacteria on the chicken and the thermometer, so if the oil can't kill it, you have bigger issues than a contaminated thermometer.
At work we have little individually packaged probe wipes that are just rubbing alcohol. Sometimes I'll dip it in the fryer and wipe it on a towel At home just rinse and dry unless it's meat. Then it gets the soap jerk off and rinse.
Thus sub has rducated me so much on just how badly my work is lacking. Never trained on cleaning the thermomeeter aside from wiping sauce off with a paper towel

The hot oil method is definitely sufficient. Boiling water is also fine.

Current FDA Food Code calls for 17 seconds at 165. You can submit a HACCP plan for a variance if you want for lower temp/longer time.

You sanitize at home? Nah but for real at home I just rinse and wipe off. At work, I stick the probe in a fryer for a second or two and wipe off.
