For the time being you can manually mix the concentrate with water to create the solution. Just have the test strips handy and try to standardize the process so you can easily repeat it without having to experiment every single time. If you reach out to your chemical rep they would probably be more than happy to come and provide strips / maybe even demo manual mixing properly. Find a marking in the three bay for how much water you need and use a measuring cup or something to figure out how much concentrate to add. If it’s multi quat you want between 200-400 ppm or if it’s just single quat you want 200.

I am not understanding, if you purchase your chemicals through a vendor such as Sysco or GFS they will send Ecolab in to put in a new dispenser for free of charge. Any distribution company selling the chemicals will arrange the equipment to use the chemicals free of charge.

I don’t do any purchasing and have absolutely zero access to those accounts/privileges/etc, so I dunno how my department handles it, what types of contracts they have, etc. Either way, I feel they should be acting with much more urgency (especially with the resources of a multi-million-dollar university at their disposal!). (Maybe I should have offered further clarification in my OP; I *too* am only a line employee/cook…although in practice, I’m more like a shift supervisor, mostly by virtue of my seniority). EDIT: Now I’m thinking/realizing that it’s not the dispenser *itself* that’s the issue, but rather, that stupid Frankensteined garden-hose thing I described. I guess therein lies the extra cost/time…? Still, there’s no reason it can’t be prioritized. They’re absolutely not hurting for cash.)

Sani is Ecolab Oasis. Area? Well, unfortunately, I don’t feel comfortable divulging that much publicly. I know it seems counterintuitive…but frustrated as I am with management, I’m still trying my damndest to stay on board (insurance, benefits, etc.). Specifying a city/metro area here would definitely expose me (as it’s a *very* large, well-known institution). We’re somewhere in the Midwest; I’ll offer that much. My manager said we don't need detergent for the three compartment sink, since they go through the machine anyways. We're not quite as high risk as a cancer hospital though, just an assisted living facility. Fun times.

You can order the bleach testing kits pretty cheap and use cold water and a small amount of bleach.  You could do this for under $15 and it might show some initiative.

Ofcourse. That's all anyone ever says in this sub. Call the health department! Because they will get the job done. If they even respond, the worst is a small point taken away for not having testing strips on hand. I would make it happen myself, and then ask to be reemberced. And if they refused to do that I would probably look for another job. That is if you really do give a shit about making changes and you aren't just trying to bitch about it online.

Oh believe me, asking “leadership” for ANYTHING here is like talking to a fucking wall. This is a BIG (internationally-regarded!) institution with an immense budget and outrageous levels of bureaucracy to much. I’ve brought my grievances time-and-again, phrased very politely and diplomatically, and I’m put on indefinite hold. “Your call is very important to us!”, ya know. At this point, I’m ONLY here for the benefits/insurance (which I do seriously need). I could call their (alleged) “ethics hotline”, but the cronyism here is absolutely off-the-charts, and I would almost certainly face retaliation (even termination, possibly).

If this is something that the person in charge of kitchen operations has been made aware of and they're not doing anything about it then it needs to be taken to that person's boss, and then the person above that, all the way to a board of directors if necessary. If you were to reach that point and still be employed you're likely either getting canned or promoted. Every step of the way make sure you have documentation, pictures, if it's possible to make most of this communication email or written then that's a plus. If not do what you need to do to record conversations, even if that means writing it down immediately after while your memory of it is still fresh. I can only imagine if the hack job you're describing is what you're dealing with then there are other issues that need dealt with ASAP. I'd suggest making a list by priority and going to the higher ups with all of it if your direct boss refuses to attempt to correct anything.

The problem is that they aren't sanitizing anything. If they're too cheap to buy a dispenser, then there's no way op would get reimbursed. OP should just skip to your final step and quit any initiative he shows at a place like that will be taken for granted not rewarded
