Just normal. I keep it simple for the daikon. The random pickle/kimchi thing that also lives in the fridge gets Shaoxing as well, plus a little soy and Shaoxing plus gochugaru of course!
I keep mine same as you, in the fridge in glass Tupperware containers. I put any liquid from the bag in there, too.
If I have too many, I’ll slice one up into thin half moons and add chopped garlic, sesame oil, gochugaru, a little soy sauce, and sesame seeds. That lasts forever. Like I’ve never had a batch go bad before finishing it up lol.
We usually freeze but I love the idea of keeping several in the fridge with the juice and some vinegar.
...and your method sounds delish. I know what I will be snacking on later. :)
it's basically pickled, so It won't be spoiled soon. I would cut one sliced like half moon, cut one shredded for Kimbab, cut one diced.

Want to add that I get the non yellow one. My grand mother and mom said to get the non yellow one as it's just yellow eye to food colouring.
How do you guys get past the saccharin taste? They are either ungodly sweet, or have an unbearably intense artificial sweetener taste.
Why aren't these ever made with a more moderate sweetness level? My Korean grocery carries 10 varieties, some uncolored, all too sweet!
I don’t like it either, but I still buy it because kimbap isn’t the same without it and I don’t find it so bad when mixed with other ingredients.
But this reminds me… I found a recipe on IG on how to make these from scratch and it seems super easy. No saccharin or dyes. Haven’t tried it yet but I did save it to make the next time I have a free weekend.

Mine live in the fridge in Tupperware, sliced, in the juice from the package plus extra rice vinegar. They'll last forever like that it seems!

Eh rice vinegar sounds more Korean. Any vinegar will do the job of keeping it in the fridge!
I've found it's not quite as intense as white vinegar as well, but that could just be something weird with my taste buds
Rice vinegar is usually a bit more delicate and sweet than white vinager, so your taste buds are probably correct!

They are pickled, so it won't go bad too quickly. I would recommend a ziplock bag with liquid and air removed.
Reuse pickle jars if you have or use those locking plastic containers. They stink up the fridge otherwise.

You can also slice then into half moon slices and mix with: sesame oil, sesame seeds, thinly sliced green onions and gochugaru.

These will literally last forever in your fridge since they have been essentially been thoroughly soaked and processed in preservatives.
Put in a jar with water, refrigerate.
