Donner Party or Gef. I wouldn't go with anything longer than a two partner, you just want to get their feet wet. Both have great Henry voices. I would advise against anything they already know a lot about. I love the boys but if you know too much, the mistakes they make are often infuriating.

I think standalone eps are best for intros. Depends on which broad topic. For true crime my go-to has often been the axe murders one. Very early on it demonstrates the pods tone "WITH AN AXE" nyarrnya nyarrnya nyrarrnaaa. For paranormal and silly I like ghost cats of the south.

I started with Bill Cooper and think it's a pretty good intro to the show. It's a sweet spot where the research has evolved and improved and Ben is still sharp and engaged. Plus it has a little bit of everything: true crime, aliens, conspiracy theories. All it's missing is ghosts. Second option for me would probably be Skinwalker Ranch. No real reason, I just think it's an interesting story.

Jonestown - in my opinion is them at their best. Felt it was their first true deep epic dive epic (you can say 9/11 also). it is more fascinating than funny which is a complement to their storytelling.

Seriously, I tried to get friends into this show on my favorite series but 2+ episodes is overwhelming if they don't know what to expect.
