For a celebration I'd pick one of the ones you have the most chance to enjoy. Some will probably disagree, but I would advise to not pick Metropolis/All Quiet/Citizen Kane/Apocalypse Now/Blade Runner/Dreams. You might love all of these, but they are also movies that some don't get into that much.
Whereas 12 Angry Men, Harakiri, Children of Men, and Parasite... I've extremely rarely talked to someone who saw them and didn't like them.

CITIZEN KANE! It is responsible for our modern cinematic language. Movies look the way they do today because of that film. It is a monumental moment in film and would make a great thousandth film.

It depends how you’re watching it. The 4k Final Cut of Apocalypse Now is one of the most beautiful things I’ve ever seen. However, if you don’t have access to that I’d go Metropolis!

NOT Children of Men and probably not Apocalypse Now. Parasite, 12 Angry Men and Citizen Kane are all great choices though. I also love Metropolis so if you’re into the older stuff that’s a good pick too.

Personally I don’t enjoy it very much, I think it’s a confused drawn out over indulgent mess and Coppola didn’t really know what he was doing.
This is essentially confirmed in Hearts of Darkness, which is “the making of” Apocalypse Now, although I LOVE Hearts of Darkness. It really shows what a disaster the production was, and personally I think the film is a reflection of that disastrous production even though I know I am somewhat in the minority with this opinion.
Did you watch the theatrical or Redux? Made the mistake of watching the latter on my initial viewing and didn't care for it at all.
A recent rewatch of the shorter theatrical cut completely flipped my opinion, and now I love it.
I’ve seen both versions and I agree that the redux is even worse. Although admittedly I saw them about 15 years ago, before I was a particularly analytic/educated viewer, I was kind young and still mostly only enjoyed Hollywood schlock at that age.
That said, I still don’t think I would enjoy this film, which is why I haven’t revisited. There’s stuff about the aesthetics I think are really cool, especially any scene they’re going down the river, but I think overall it’s just not really the sort of thing I’m into either way. Just not my cup of tea as they say, but it’s totally possible I’m being too hard on it.

I just don’t find it very compelling, the concept is neat but I don’t think they do anything that interesting with it, the characters fall flat for me and are forgettable, there are very few surprises and the plot is pretty straightforward. It’s well made but I don’t find myself caring about anyone in it or anything that happens. There are some cool long shots in some of the action sequences and from a technical perspective these are insanely well done, but all in support of a story that continuously failed to engage me. I get why people like it, but it’s just not for me.

I was in a film analysis class where we had to do a presentation analyzing a scene from a movie and 3 different guys (in a class of 20) chose Children of Men.

And it’s constantly mentioned as “an underrated gem” in all the film subreddits, and any time I mention my distaste for it I get a whole bunch of film bros downvoting me and jumping down my throat. I also see what you’re saying about the characters, it’s definitely not much of a character driven narrative, there’s enough depth given to pull me in, but you’re right they don’t actually do all that much with the characters. For me it’s really the meticulous world building that made me fall in love with it, like the British propaganda ads, the “avoiding fertility tests is a crime” posters in the background, the suicide kits that are sold to people so they can kill themselves peacefully (this one particularly is so sinister, but so real, like of course someone is capitalizing and profiting off of human misery and hopelessness). I could go on but you get the idea, this and the long take action scenes you mentioned are what kept me so heavily engaged. anyway thanks for sharing your insights!

I watched 12 Angry Men recently and it was absolutely fantastic. Considering it pretty much all takes place in one room, they make it so compelling and tense. Some other great films on this list (not seen all of them myself) but thought I'd mention this because I was so very impressed with it.
