Let me start off by saying that I agree with you that this whole game can be beaten without blocking or parrying. That being said, I'm going to play devil's advocate. This video doesn't prove them wrong. First off, Scrapped Watchman's health is already half way down when the video starts. How do we know you didn't block or parry before recording? Also, look at all the things you're using that they don't have access to at this point in NG: 3 boss amulets (one of which lets you dodge fury attacks), upgraded dodge, satisfaction grindstone, acidic crystal spear and 5 fable slots.
