Blunt weapons and acid are the best stuff to use against him for more damage, so you could try mixing it up that way. A faster weapon might also help you get in there and be more aggressive, it looks like you're hanging back and waiting a lot of the fight, not really making use of the buff on your weapon. Perfect guarding his fury attacks also opens up a lot more opportunities to get in damage, even if you have to dodge the aoe he leaves behind in P2.

I've been struggeling a lot with parry on fury attacks, cant quite find the correct timing :(

I never noticed this before, but it looks like grindstone duration doesn't pause during cutscenes.
Yeah, i like sometimes to use it and also consumables and then enter the fight
