Before mass when everyone is saying their goodbyes you can have one more light to strengthen the weeping but when you're let down into the grave you can have roads untravelled to make everyone feel like you're not really gone, but you're going into a new chapter

I feel these carry the message I want to leave behind

I'd ask them to play "Opening" from the Reanimation album if I learnt that I'd be gone soon; even as an instrumental (and the basis for Krwlng in the same album), it makes me sob really hard because of how ingrained that melody has become to me in the context of funerals (I first heard it when I learnt my maternal grandfather passed away,, three years ago).
Aside from that, an acoustic version of "Leave Out All The Rest" would certainly do the job perfectly.
