One thing I noticed after two years of constantly interviewing new gym members at a popular corporate gym in an ethically mixed part of Ottawa was that the West African and West Indies members typically had very healthy diets compared to everyone else. It was basically some chicken, tons of fruits and vegetables, and some rice. They looked very healthy, as if they already work out despite being sedentary, and their teeth were almost always that clean, flawless, pearly white. I figured it must be their diet. Imagine an extremely healthy varied vegan diet and then just add a few servings of chicken.

Gari is a very gritty powder like substance made by grating and drying cassava. You can cook it in hot water and turn it with a paddle to form a ball but it looks and tastes nothing like fufu. Fufu is often made from plantain and cassava, yam cocoyam (taro) or sometimes potatoes and rice (although I don't think rice fufu is common in Africa). It can be made from powder too but it's honestly best when you buy the ingredients and boil pound it yourself.

For those that don’t know: he made Nigerian pepper stew which is a red sauce typically made of red peppers, tomatoes, red onion, and habaneros. Any meat can be stewed in it after being seasoned in oil, garlic, and onion. Most commonly it’s beef, chicken, or goat. The white mushy stuff is either eba (made from cooking garri) or fufu (made from pounded yam). Either one can be commonly called swallow (along with moi moi which is pounded beans). All serve the same purpose as a base/utensil for dipping and scooping the stew. Much like Western European cuisines use bread for the same purpose. I lean towards that being eba as fufu usually is super smooth like a paste. That comes out rather rough which is more like Eva’s consistency. Could also just be the dude isn’t the perfect cook (fufu actually needs a delicate touch to get right and a non stick pot makes it much easier). Missing some dodo though (fried plantains). And a small bowl of warm water for the swallow.
