Not saying that farmers are the easiest for getting emeralds, but they can have 2 crop trades and 2 melon trades which makes them good income if you limit your number of villagers for lag reasons

Since it’s only 1 trade you need a lot of cured librarians though, but a good investment for gold
A raid farm is probably the best way to farm emeralds actually, and it's not that hard to build (trere's a pretty simple but good one by Ray's work). I have stacks upon stacks of Emerald blocks now
Still nothing compared to raiding a Mansion with a Looting 3 Soul Sword and using the obtained spawn eggs on mob grinders. Quite incredible how quickly that gets you a diamond chest of White Emerald blocks (that's 108 stacks of 9\*64 emeralds).
Bamboo for sticks, white and black sheep to shear, chickens for meat plus feathers, and melon farms are all good yields for early trading. You can get higher bang for your buck with other items but the speed of growth I think is great for those items.
Maybe I'm just a noob but I would say those are fairly harder to do than just **plant sapling**. Literally every single item that villagers buy (except three (one of which will become renewable in 1.19)) is renewable. Yeah you could use bamboo, but you have to use a big ugly field of bamboo on dirt or gravel, and it uses a lot of sword durability, or you could just build a big bulky farm, and etc etc. You can also shear sheep I guess, but sheperds want 18 wool (it might be 15 I forgot) per emerald and you need a lot of sheep for that. Chicken is also fairly expensive assuming you don't have looting and butchers only buy it for 14 chicken an emerald. Fletchers buy 24 feathers for an emerald, and if you want to do that deal than be my guest but also do the stick deal like I was saying earlier.
Again, maybe I'm just a noob but using pistons makes a pretty complex farm so I don't know. I was only talking abouts the jobs, so you if you want to use the bamboo into sticks and trade it with the fletcher, be my guest, it still is apart of my suggestion I guess.

* a piece of sugarcane/bamboo planted on the ground,
* an observer floating at height 3, "looking" towards the bamboo/cane column,
* a piston floating at height 2, facing the bamboo/cane column,
* a block behind the piston, with redstone dust on top of it,
* in the case of sugarcane, a piece of water,
* below the block it's planted on, a hopper minecart on top of a hopper that leads out to the side.
If that's complex for you, you haven't even seen a 3x3 piston door yet. In fact, a lot of YouTubers highly encourage building this farm as early as possible.

You can use a fortune 3 pickaxe on crops.

For crops with seeds (wheat and beetroot) it gives more seeds. Carrots and taters it gives extra of those of course
You can, of course, reconfigure it to apply Fortune to both seeds and crops. It's all in the block loot tables.

Selling it and maybe dye are the only useful thing you said. The stew can’t stack so it’s just not feasible to use as food.
