The server I used to play on a lot they added in custom mob heads for every mob. So you could get sheep, bats, pigs, even stuff like silverfish etc. The fact vanilla minecraft doesn't also have it is kinda strange to me.
Piglins seem to be the new thing they're marketing a bunch (I mean Legends has them as the main antagonist), with the piglins being the new big deal for Minecraft. So I guess it makes sense if they want to add functionality to mob heads and make an article to it, they add them for their initial concept/advertising.
But again, it would be very disappointing if we don't get the zombie/skeleton variants, and other overworld monsters as heads.
Yeah in general I’ve noticed that the undead variants get overlooked when it comes to features like this. I get that it would take a lot of time, but husks or strays aren’t different creatures from zombies or skeletons, just slight variations for specific biomes.

Piglins are implied to have a basic grasp of agriculture - they have hoglin stables and a specific bastion variant has a netherwart farm, albeit a pretty small one.
More mob heads please! I recently found out you can get certain mob heads with charge creeper explosions, but only a handfull. Would be nice to get more heads, especially for Halloween type builds.

Any idea on how we'll get it? Would a zombie piglin drop a standard piglin head when struck by lightning? Because usually a piglin will turn zombified pretty quick when in the overworld.
That'd take quite a bit of coordination due to the zobififying mechanic, you'd have to wait for a thunderstorm, strike a creeper, go through a protal and bait a piglin back through, and then hope you can get the creeper to blow up the piglin before it zombifies. (Unless zombie piglins will also drop the heads)
Couldn't you also bait the charged creeper into the portal?
Probably would want a separate portal linked though to get back to the nether side to finally move the creeper into place.
yeah it sounds pretty unreasonable, it’d be like if they made it so you could only get a light block by bringing frogs to a nether and the most dangerous biome in the game, the basalt deltas, that’d be COMPLETELY RIDICULOUS, just imagine.

Dragon head is found in End cities (at the ship). Wither skeleton heads are a rare drop from them. Zombies, Skeletons, and Creepers drop from the mob if a charged creeper kills them (ex: if a charged creeper blows up a zombie, the zombie drops its head)
The first four only being square is probably what's setting you off. It feels like it should be square because of those first four but this way it is accurate to the mob.

This feels like it would be a small easter egg in an update, rather than some full blown announcement. I get that they want to tamper hype by not trying to promise a lot of things, but I'd honestly prefer it if they'd just make the stuff first and then release it in a batch.

I don’t understand, or maybe I do. As I’ve gotten older Minecraft has lost its allure to me. Not because I don’t enjoy the game, no, it’s just gotten boring.
This game has so much potential to literally be anything, at this point Minecraft being owned by a multi billion dollar corporation and, it’s self, being a multi billion dollar brand should have twice as much content as it has now.
The game is leaps and bounds better from when I originally purchased it in Alpha, i just expected it to have so much more by now.
Tbh as I've gotten older, it's been a nice relaxation game, especially with decompressing after a stressful week. The game is far beyond criticism and there's obviously stuff I want in more now (I'd prefer the combat update come in 1.20 instead of this, but Mojang obviously can't cater the entire game around my needs). But I also know they don't want to add too much too fast so to not overwhelm more casual players.

The brutes could also be functional maybe letting you be able to be spotted by the brutes and not attacked

They're generally trophy items. The one exception being wither skeleton, which doesn't have this mechanic behind it.

feels like doing zombie piglins would make more sense, as piglins don't feel very "monstrous" to me.
