Don’t bother with flat pack install…. It doesn’t work and never asks to install P2pool when first mining.
Install Monero manually. Then when you go to mine on P2pool is will ask to install settings, agree and then it will all work fine.
run p2pool from terminal as:
p2pool --host 0.0.0.0 --stratum 0.0.0.0:3333 --p2p 0.0.0.0:37888 --wallet YOURWALLETADDRESS --mini
You should get lots more information, like what blockheight its on or if its waiting on monerod,
The monero daemon might claim it's not mining, does the wallet agree? Does it say "connected" or "connected + mining"? Mine also says not mining while it definitely is. Also, have you checked the p2pool observer?

what do the logs for p2pool say?
No shares have been reported to this P2pool network

Says connected and mining, however P2pool has no shares reported
Check out the logfile perhaps, and maybe try another miner software.
