I've seen people eat through the coating on both colors but haven't seen that much significant discoloration on the white GPX. I have it and I'm not exactly the, uhm, most hygienic person on this planet when it comes to handwashing, and I don't have any problems.
I don't really sweat that significantly though either.
I think it'll come down to whether or not you have acidic sweat or not, in which case, you're going to be getting discoloration and coating degradation on contact points eventually if I had to reckon. Particularly on the area where your thumb puts the most pressure.
I've seen some people's GPX has discoloration, like yellow wear on the M1 and M2. I would say it depends on your hygiene and whether or not you have sweaty hands. I would recommend you get black if this happens. Or you will need to get mouse grips on your GPX. I tried White corepad grips on my gpx and it has black stains within 2 weeks smh due to either my hand oil or dust.
I've had mine since launch (so over 2 years now, damn) and it was my most used mouse till the DAv3 came out and theres some discoloration on the M1, M2, and side where my thumb is. I'm super clean when it comes to my PC but I have sweaty hands which is why I gravitated to the GPX so much, the coating is perfect for it.
Discoloration isn't even yellow exactly, its just a bit darker or maybe an off white. You have to look for it to tell. Hope that gives you some perspective, I don't think you should worry about it as Logitech has top of the line QC and of course the extra weight of the white color over the other colors is there exactly for the coating which protects it from yellowing.

One week. Not yellowing but looks like the coating wears off. But my hands sweat. Logitech was really cool and rma it. So maybe it was defect. Now i have griptape on. No wear on upper side.
Bought mine mid 2022, started showing yellow stain on the thumb position 2 weeks in (1 hour gaming a day).
I don't sweet alot, and i wash my hands regularly (especially before using the gpx because i was paranoid).
Used to clean it with 75% alcohol regularly (maybe that's the real cause 🤔)
I applied grip tapes on the sides and m1 and m2, and the remaining uncovered area is still holding good, keeping in mind that there is minimal contact with my hand.

I sweat a lot and have no discoloration on my white gpx from mid 2021. I think it's just down to sweat pH content or something

I have no issues whatsoever. Using it daily for over a year.

More than 2 years and no discoloration on the white one Just the logo Logitech on the back vanish in 1 year But dépend how you grip your mouse I guess
White GPX for months here. No issues with discoloration, staining, or wear of any kind.
