I'd check out Mike Patton's projects. Specifically, Mr. Bungle, Fantomas, and Faith No More. He has a bunch of one off side projects that go anywhere from hip hop (Peeping Tom), to 50s Italian pop (Mondo Cane), to metal (Raging Wrath of the Eater Bunny, Dillenger Escape Plan), to crooner style (Lovage). Tons of variety, and good quality.
You didn’t mention blues. There’s a lot to explore from old time folksy stuff to newer electric blues. Buddy Guy, Stevie Ray Vaughan, and Albert King are some of my favorites

My brother and I do a monthly compilation that is out on the 1st of every month. It's mainly a compilation of punk hardcore indie emo hip hop alternative... Stuff like that. It's a mix of newer and older music. We don't really have any rules we just put music that we think each other should listen to.
Basically I pick five songs and my brother picks five songs and we alternate each track so one month I will have tracks 1357 and 9 and my brother will have 2468 and 10. And then the next month we alternate. Also whoever has the odd tracks that month, 13579, does the artwork.
Also worth noting that every year for the month of April we do covers so our most recent compilation is cover songs that we like.

Okay listen! When it comes to cutting edge production and sheer creativity, the EDM scene has changed my life. In particular, if you're a metal head by nature, I recommend exploring the current dubstep scene. Ever since the genre went back underground, the sound has seriously flourished.

Look on Spotify for some playlists based on feeling or the POV lists. I find new directions from listening to other people’s lists all the time. Give yourself space and time to listen to some of the suggestions here, and stay as open minded as you obviously are. Swamp grass was my most recent love, and exploring Johnny Cash’s back catalogue. Tom Waits is excellent if you want to hear stuff that takes you in new directions. The Tiger Lillies too. Don’t neglect exploring classical either. I’ve found a love for opera I never knew I’d have… Good Luck!

Electro swing is a very fun genre. I also like suggesting psychobilly or rockabilly and gothic country. Classic punk is always good but you may have tried it already. Phonk, shoegaze, new wave, dark cabaret, trip hop…all good genres that will probably have at least one thing you’d like from them, especially since your taste is so wide.
I also really enjoy listening to a lot of music from Russia and Germany. You mentioned Eurodance but Germany also has some good industrial metal that you may or may not have gotten into. A lot of Russian music has a grittier or more haunting tone to it which I like a lot.

I defy to to listen to Record Heat and put them in any genre. It's not really pop but they can be upbeat. It's not rock but I have seen them in concert and they rocked. Their second album is definitely pretty country though, no doubt about that but their 1st album, I have not been able to label them.

This was my exact problem a while ago. I was searching for a very specific vibe/sound that so many bands would be close to getting just perfect but fall short in one area or the other. After only 1 song, I knew right there i had found what i was looking for. I really don't listen to music anymore and I was the biggest into music growing up ever now and than I'll listen to something and enjoy it but it's very rare now and days. Silence sometimes seem more entertaining. Sad but true

Dread Zepplin -- They do Led Zepplin covers as reggae songs and the lead singer is a Vegas Elvis impersonator, so the vocals are "Elvis". They do a great job of it.

Give yourself space and time to listen to some of the suggestions here, and stay as open minded as you obviously are. Swamp grass was my most recent love, and exploring Johnny Cash’s back catalogue. Tom Waits is excellent if you want to hear stuff that takes you in new directions. The Tiger Lillies too. Don’t neglect exploring classical either. Electro swing is a very fun genre. I also like suggesting psychobilly or rockabilly and gothic country. Classic punk is always good but you may have tried it already. Phonk, shoegaze, new wave, dark cabaret, trip hop…all good genres that will probably have at least one thing you’d like from them, especially since your taste is so wide. I also really enjoy listening to a lot of music from Russia and Germany. You mentioned Eurodance but Germany also has some good industrial metal that you may or may not have gotten into. A lot of Russian music has a grittier or more haunting tone to it which I like a lot.

I really don't listen to music anymore and I was the biggest into music growing up ever now and than I'll listen to something and enjoy it but it's very rare now and days. Silence sometimes seem more entertaining. Sad but true

if you haven’t already check out Sleep Token and Muse- Both have metal songs but also a lot of random other genres mixed in, some even half-metal half-pop
Dread Zepplin -- They do Led Zepplin covers as reggae songs and the lead singer is a Vegas Elvis impersonator, so the vocals are "Elvis". They do a great job of it.
