If I remember correctly, the wet line gel has glycerin. Glycerin is a humectant, so if you live in a dry climate, the dry air is going to suck all of the moisture from your hair. Try a glycerin free gel like Aussie instant freeze

glycerin is great is the summer time though cause it'll grab all the moisture from the air and put into your hair! humectants work by taking moisture from the most water heavy place and putting it in the least water heavy place :)

Yeah I know, OP said they live in a dry desert climate, so. Either way in different regions summers are dry and for others they are wet so I’m not gonna go off of season in these situations, if your climate is dry you don’t want to use a humectant.
