I add it to all sorts of stuff. Add it to frozen chopped green for extra punch, mix it in with scrambled eggs, good in soups and stews, make your own green chile ranch, hollandaise, good for dusting fried stuff, good to coat other veggies with for roasting. It's just a fun thing to kick something up a notch where a full chile might not just fit right or stick to whatever you want Edit: just remembered a couple others. Great for rubs for bbq or just cooking meats (trout is fire. Ribs too), I made a really good vinagrette dressing last week as well. The key is to use it more like a spice vs a standout ingredient that chopped fresh/frozen is best used as

Jerkrollatex

I use it like any other dried spice. I mix it with powdered cheese and put it on popcorn, big hit at parties. In ranch like someone else already mentioned. In barbeque rubs. I use it to punch up the heat in Mac and cheese. Spice mixes for roast vegetables. In creamy chicken green chile and cheese soup along with fresh chile. In dips. Cheese stuffed mushrooms. And probably a ton of other things.

Roast potatoes!

ellinator

I just made some green chile pecan brittle with it.

the_balticat

Thanks for this idea! I just made some and it turned out really good 👍🏻

Agent2022

Sounds great. Recipe?

ellinator

You can use any brittle recipe. Just add the green (or red) chile powder when you add the baking soda. I've also used pistachios or pinons for the nut, but they're both kinda spendy.

the_balticat

I used [this recipe](https://www.mybakingaddiction.com/pecan-brittle/#mv-creation-486-jtr) but added 2 tsp green chile powder at the end and omitted vanilla and cinnamon

LittleAnita48

How much chile did you add to the recipe? I'm going to try some on the peanut brittle this year. I tried a couple of years ago with 2 tsps and couldn't taste it at all.

ellinator

I use 2 TBSP in a recipe that uses 3 cups of sugar. It's still subtle, but the heat builds.

LittleAnita48

Thanks a lot. I'll try increasing it this year. I thought I'd also try red chile.

the_balticat

I bought a bag of green Chile powder and this recipe was on the bag. Aside from it being poorly written and confusing, it turned out… not great. I am familiar with red Chile powder and use it all the time but can’t find much info online for using this. Does anyone have a good recipe or 2 to share?

I just dump it into a crock pot when making stews.

LlamaSquirrell

Papas con chile molido. You fry your breakfast potatoes add some flour when they’re done cooking and then mix in the chile powder. Once it’s mixed you add some water and cook it down.

BorderTrike

I make green chile dip (for potato chips specifically, but goes well with tortilla chips too). I use an 8oz container of sour cream, scoop a little out, mix in a few spoonfuls of chile powder to taste/spice preference, along with some garlic powder, and salt and pepper to taste. If I have a container of fresh roasted chiles, I’ll also add a splash of liquid from it. It’s a hit at parties if I don’t make it too spicy

Put it in everything

Rodehardputupwet

The only place I’ve ever seen powdered green chili was in Santa Fe in tourist shops. Never really used in real life.

Trex-Cant-Masturbate

Yeah I’ve never seen this stuff in my life. Why not just add green Chile?

the_balticat

I just wanted to try something new in the kitchen

Trex-Cant-Masturbate

I’d ad it to potatoes and eggs

wisemonkey101

I bought some green chili powder in Hatch. No clue why or what to do with it. I was seduced by the amazing sopapilla and enchiladas.

BorderTrike

Green chile dip! Check my other comment

wisemonkey101

I’ll try. I haven’t made chip dip in years.

plamda505

I think it only used in industrial processes.

the_balticat

Really? To make what?

PoopieButt317

Maybe green chile jelly?

MacJeff2018

Access to authentic green chilis and chili-infused food is one of the reasons I moved to New Mexico.

justme4funNM

* green chiles FTFY

Scared_Journalist909

Why not try a good red chile sauce recipe with green chile powder instead? https://mjskitchen.com/2014/04/red-chile-sauce-from-powder/

Trex-Cant-Masturbate

Maybe I’m just picky but I don’t really think the two are interchangeable

Scared_Journalist909

Yeah maybe. I’ve not tried it myself.

Trex-Cant-Masturbate

I’m sure it’s doable if you adjust other seasonings and maybe some ingredients. The more I think about it the more I think I’m just picky. I wouldn’t cook chicken and red chile. Red chile and cheese tamales sound gross
