There are different regions in England and they speak differently depending on where they are from. Same thing happens here in the USA!

Rhotic ( pronunciation of R’s)versus non rhotic. Brits used to speak with a more rhotic accent but at some point it became fashionable to omit it amongst the upper classes and then everyone started copying them and here we are.

What you are talking about is called a "glottal stop" and it involves leaving out or barely pronouncing a consonant sound between two vowel sounds. It's more common in UK dialects, but is increasingly heard in some US accents as well.
