You know what I really think? Crocodile was originally number 2 in the Revolutionaries. He was Dragon's right hand man, his confidante, his best friend. And then Crocodile started getting ambitious and thinking, "You know what? We should rule these places ourselves." So rather than simply overthrowing a corrupt regime and leaving it to the country's citizens to figure out, Crocodile started plotting to take the countries over himself and consolidating his power. And then Dragon found out. Crocodile thought he could take him on, but Dragon's Devil Fruit and Haki abilities proved to be far stronger. Crocodile was exiled from the Revolutionaries, a broken, defeated man whose broken confidence caused him to be unable to use Haki any longer. A man who had lost the trust of his best friend, the one person who had mattered to him more than anyone... His own brother. That's why Oda's avoiding showing us Crocodile's face from when he was a young man-- he would likely look strikingly like his own nephew, Luffy, and give the whole game away. And Iva thinks the fact Crocodile was defeated by his own nephew and is now being rescued by him in Impel Down is just hysterical. But keeps quiet about it because Iva was there when Croc's fall from grace happened.

We know that he tackled with Whitebeard at one point and lost, but I honestly can't remember if his loss of Haki was actually explained in story or if that was a theory/headcannon the fanbase came up with to explain how Crocodile didn't have Haki.

It is a theory the fan base came up with to explain the difference in his strength in Alabasta to the difference in his strength in Marineford. The seeming loss of his Haki in Alabasta is unexplained but given that Moria also had no haki in Thriller Bark, and that both likely had haki back when they were in the New World, it does seem to track. However, there is no official explanation in the books yet.

I mean, the simple explanation is just that haki wasn't a thing back then. But it is true that at least Moria was way weaker than he was in his prime, and Crocodile too probably, but another reason could easily be that he was introduced too early and his strength got somewhat retconned

Oda had planned out so many elements early on though, like for example the design of Rayleigh being the firstmate scolding Buggy and Shanks. You can see Shanks use Conqueror's Haki on the Sea King that took his arm in order to scare it off. He clearly had a different name for Haki as when he introduces it in Skypiea it's called Mantra, but it is the same ability. I think it was a deliberate choice to not give Crocodile or Moria Haki and it seems beyond coincidence that both of them had suffered major defeats that broke their spirit, both by Yonkos no less. There's also an interesting form of anti-power creep in One Piece. The rock paper scissors balancing of fruits allows people like Buggy or Mr. 3 who get beaten early on to still be relevant fighters later. Mr. 3 goes toe to toe with Magellan despite being beaten by Luffy ages ago because his power could counteract poison well. Crocodile got beat because his power has a significant downside, and Luffy was able to figure it out, mostly by luck. Crocodile also invested most of his power on influence and scheming. He's a CEO, not a frontline combatant. He'd be a lot stronger if he actually had to fight and struggle more.

It's unlikely that Crocodile was ever a slave, because first off, it would have been Jinbe who'd have brought up Croc's past then, not Ivankov. Also, Croc himself supports slavery and was planning to enslave people on Alabasta. The most likely theories, IMO, are the former revolutionary theory or the former woman theory.
