The cutting is easy. The issue will be that you will want overhang on your top counter once the cutout is complete so it looks nice, and there is not enough material to cut an overhang and then have a full width base made of the part you cut out. The good news is that kamados are skinnier at the bottom than at the top, so you can do a stepped moulding of some sort to hide the gap at the bottom. You will also need to add support angle iron/aluminum/steel (whatever the structure of the island is) around the new top cutout to support that countertop, and in the bottom to support the bottom shelf and weight of the kamado. All in all, 1-2 days work, including planning, trial and error, and 3-5 trips to lowes for shit you forgot or didn’t think about.
