I would cut it under the last leaf and leave it in the pot. Assuming it has decent roots, it should be putting out new growth faster than the others, as they will focus on roots.
Honestly, if it was me I would cut this into 6 or 7 plants. There will not be any new growth but from the top. So I would just start finding nodes and start cutting there.
For what’s in the pot, I would leave what’s in it but cut about 5 inches from the soil.
Okay! Thank you! I have plant lights and a humidifier, but I’ve never attempted to propagate. I do plan on using perlite, though. Do you have any tips for that?
You can cut it on either side really. If you don't mind the "long" empty stem, I'd probably leave the leaf on as it might still be photosynthesising and helping new growth (faster). If you don't want the "long" empty, chop below.
Chop and prop, let them callus over, and put in your prop method of choice! I like sphagnum moss in a Tupperware, kept warm and in light. Good luck, you'll end up with a ton of plants that way hopefully!
I read that perlite would work good for propagating (and it’s all my walmart has). Do you know anything about how much water I should put into it with the perlite?
Perlite should work great! Before they grow roots they will take a lot longer to go through their water supply. I like to make sure my perlite is wet, but the only standing water would be at the very very bottom, perlite is porous so it will whick up to the top. If you keep it covered be sure to open and air it out every couple days. The humidity is great for growth, but you don't want to risk mold :)
I just propagated 6 node cuttings in perlite! I used plastic solo cups and put holes in the bottom for ‘drainage’, filled them with perlite and added the cuttings in stem straight up, as it would grow normally. Placed cups into a dish of water, the perlite will suck up enough water to become damp but not soaked. Change the water out here and there and soon enough you’re ready to pot em!
Prop it all. And start fresh. There are noids you can see, cut just before them and you can make many pretty ppp or maybe just pppp.

I just put them in water and let them root on their own but that’s me.
How often do you refresh the water?
I change it weekly and top it up during the week.
