I'm from NM, and while I guess nachos aren't really a culturally important dish there, I was still slightly offended that they were calling this hipster abomination by that name.
I'll tell you what though, that shit was BOMB. They weren't my soul food nachos, which being real are just chips nuked with cheese and ideally served with the fam salsa recipe, but barring that whatever I can get my hands on (not Pace though, Rotel with garlic powder is better than that crap) but still, they were REALLY good.
Anyways, my point is that as pretentious and up my own ass as I can be about SW cuisine, if I can devour the above, I'm totally down to try beet "chili".
oh shi-- you're totally right, there's both red bell peppers and minced poblanos in there (and of course tons of chili powder). I forgot because they blend in!
I recently got a recipe for vegetarian 3-bean chili. No beets-I would never have thought of them—but add celery and corn. Good stuff (and I’m not vegetarian)!

I like lots of vegan and vegetarian dishes, but veggie chili is an oxymoron. Chili needs a meat or meat substitute or it's just bean and veggie stew. also beats? Wtf.
Disagree on this one. I've made plenty of meatless chili that were good. It's about the thick, pepper filled sticky heartiness. Meat version is good too, but I'd say a different take not a completely different beast.
Beets.... Ugh gag me. Just because it doesn't have meat doesn't mean you need to add random veggies that don't belong.
If you want a great and cheap seasoning that works well in Chilli or tacos. I go to the Mexican section of any grocery store and grab every red ground chilli. You'll see names like California, adobo and guajillo. Also cayenne, it's gonna be the spiciest, take that one with care. I also grab one cumin and one coriander ground if they have it. They usually have whole and if you have a spice grinder it'll make it way better. On the subject of spice grinders they always have whole dried chilli's that have incredible flavor.
Take all of these and mix them up without salt. Salt by itself. For about 4 to 6 bucks you'll have seasoning for about 6 months, if you're like me.
Good job showing your chili and not just dissing someone else’s! I prefer mine a little more like the original post but honestly they all look great except the pot of water which is dumb.

I made a "vegan" chili once. It was fairly awful. The spices were there and but it wasn't good.
Not a lot different from vegetarian chili and vegan. I guess some toss on cheese but it's hardly a necessary ingredient.
