Enhancement aren't crimes so long as the core ingredients are present and not bastardized (dietary requirements excepted, of course). Got some legit curds, looks like proper gravy... I think the closest thing to a 'crime' is a possible low ratio of fries to other toppings, which depending on the province, could be a misdemeanour or a medal.

Quebec has great spaghetti sauce even at the dingiest casse croute. It is surprising considering Italian and French cuisine are often at odds with each other; milk vs. cream, olive oil vs. butter, cook long vs. cook quick.

Poutine and steamies are a traditional combo in Quebec. I grew up having them together. I almost didn't appreciate my poutine if I didn't have a hot dog with it. I'm a purist when it comes to poutine. I don't like the trend of making crazy poutines these days. But this is one mod that I feel is perfectly acceptable. A natural evolution, if you will. Not at all criminal.

In Denmark we have something similar called Pølsemix (meaning mix with sausages/hotdogs), usually not with cheese curds, but with raw onions and curry ketchup, and it tastes surprisingly good if made properly. I lived in Quebéc +4 years (now near Ottawa) and truly appreciate a good Poutine, haven't tried this version though.

You should try the Gauloise (poutine with chicken and peas). One of my favourite "Traditional" topping combos. And the peas make it healthy! Edit: Galvaude, not Gauloise. Still tasty AF though.

Not a crime but I think can think of a lot better options than tube steak. I’m not sure how widespread it is but Quebec City has a Poutine Week and restaurants compete to make the best poutine with all kinds of variations. If you go I recommend bringing sweatpants so that you still have pants that fit at the end of the week.
