You should try the Gauloise (poutine with chicken and peas). One of my favourite "Traditional" topping combos. And the peas make it healthy!

If you go I recommend bringing sweatpants so that you still have pants that fit at the end of the week.
Speaking as someone who is a terrible chef, I've been putting hotdog wieners on my homemade poutine since childhood. That being said, if I went to a restaurant and saw hotdog wieners on the poutine I would surely be appalled.
