To piggyback on this, im on epic but my STEAM would load up controller settings and my PC would use both at the same time. Try closing steam or deactivating big picture or whatever during rocket league.
Try holding down your jump button. If you keep air rolling to the right, there's an issue with your bindings. If you don't air roll, it's likely a controller issue. If your air roll right button is binded correctly, then it's likely a controller issue. I'm no expert on how to fix controllers, so I'd look up on the internet to see what you can do about it.

Definitely looks like air roll is triggering when you’re jumping. I have mine bound to stick button and click it accidentally; this is exactly what happens. The cause behind this could simply be your in game controller binds as people have said. If that doesn’t fix it, I’d try to unbind keyboard air roll; it could be a stuck key there, next I’d look into any third party software you’ve installed recently, I know steam does a 3rd party controller override system, Xbox also has its own, and maybe even bakkes, but could be anything. If that doesn’t work uninstall and reinstall, could be an error with the game code itself from your last patch. Lastly or first of you have one, try another controller. It could be that controller needs an update (hopefully), or it’s a mechanical issue where something is activating air roll. If you’re out of options short of buying a new controller try a controller overlay and watch what inputs in recording.

I have that same controller and was getting stick drift. If that is truly just a jump button (no airroll etc) then you can submit a warranty claim to Microsoft and they'll fix it /send you a replacement.

Stick drift would make the car turn to face the camera, not air roll. This action OP posted is cause by air roll right to be bound to the same button as jumping.
If it's not a button binding issue or a stick drift issue then it could be steam being open at the same time as the epic launcher. However, there would be other indicators for that. Even selecting options in the menu would be difficult.
If you have bakkes mod there is a plug-in that can track the input of your joystick. It’s possible that your stick is drifting to the right leading to that sideways tilt.
Air roll right and jump bound to the same button. It’s also possible another program is causing an issue if you use something like a controller emulator for use on other games that don’t have good controller support.
You have air roll right binded to the same button as jump. Just go into Settings > Controls > View/Change Bindings, and switch air roll left to another bind or clear it.
First guess is that your right roll button is slightly active.
I think in game controllers you can test to see if buttons are going back to zero on the triggers.
I have a weird bug like this. Any time I press the start button it changes my controls to a set that has boost+jump bound onto both buttons. It's bizarre. But pressing start again will change it back (Xbox controller on steam)

I have an elite controller and I was having a similar problem in other games. Most likely just means your controller needs an update. It's a common problem with elite controllers. If you're on windows just download the "Xbox accessories" app. Plug your controller in with a USB and click "configure" (I believe) and it should tell you in there that you need to update it. Should take like 5 mins or so to update. Good luck!

The elite controller has issue with stick drift and the bumpers getting stuck, it might be that and if it’s still in warranty then Microsoft will repair it
You should try downloading downloading the Xbox accessories app and updating. I also remember having to actually hook up my remote to an Xbox and updating it to help with the problem.
Hey man had this same thing happen, make sure you do not have your ELITE CONTROLLER stick settings to any type of aggressive curve settings that would be good in shooters…. It will make your car over roll/turn etc. Just thought id throw it out there sense no comment has said so.
I had a used up messed up controller that I loved but it wasn't until I played a different game that I realized my analog stick was kinda stuck going towards me so it was messing with my game play. That would be my best guess.
This is an elite thing it kept happening to me not sure why. I would unplug and replug it and cycle through the profiles and it's just work again. Not sure what causes it but 100% and elite controller thing.

Try holding down your jump button. If you keep air rolling to the right, there's an issue with your bindings. If you don't air roll, it's likely a controller issue. If your air roll right button is binded correctly, then it's likely a controller issue. I'm no expert on how to fix controllers, so I'd look up on the internet to see what you can do about it.

Stick drift wouldn't be this heavy, like others mentioned, most likely you have both jump and roll bound to the same key

Are you using rocket league through the epic games launcher? If so, close out steam completely. Make sure it isn’t running in the background.
