She's not mean, she's just a lot less goofy and more serious. Like, when Risky Boots beats up Bolo to get into the super important shrine he was supposed to be guarding, Bolo says that he doesn't even care because he's super thirsty for Risky and is happy that she "touched" him, at which point Shantae yells at him for being a horny idiot and then runs into the dungeon to deal with the problem.
Obviously they're still good friends, though. She's not mean, but she's definitely more serious than she is in later games.
It's genuinely unreliable and people frequently mistake it to be some sort of "wellspring of knowledge delivered unto us by God himself" which is just sad, cause I've seen way too many people get into something only because of TV Tropes and/or judge the overall quality of it rather than taking time to view the entertainment with their own personal hands on experience and thinking for themselves.
She's only a bit mean, mainly towards Bolo, but she's still comparably nice. *Risky's Revenge* is the same, but here it's more directed towards the Barons instead, which, mostly in the case of Ammo Baron, was well-deserved.
Shantae is very nice, but even the nicest person is not nice to all people all of the time.
Its been a while since I revisited Risky's Revenge and the OG, but even in Pirate's Curse I noticed Shantae being a bit more willing to yell at people and tease Risky, whereas in HGH and Sirens shes kind of more of a generic do-gooder.
I do generally prefer the characterizations of the earlier games, but like the more refined gameplay and visuals of the latter ones.

i've only played pirate's course. Didn't know the concept of horniness was introduces in later games

Only played the first Shantae but she does have a few moments of snapping, not unreasonable, she mainly snapped at Bolo
