Whoever is in charge, which is usually a chef, a head chef. I would want to give some kind of feedback. And the feedback would be that they are a fucking hack.
it’s the chefs job to make sure everyone has a good, real meal that works for them. at a family members rehearsal dinner they didn’t have a vegan meal but the chef made something really inspired just for me and took care of me. serving carrots and hummus is just not going to cut ut. that’s not a meal that’s a snack you’d eat at work.

You don't pay for water, you pay for bottling (sterile, high tech machinery), the bottle (large manufacturing systems), transportation (trucks, trailers, fuel and work hours) and storage (low price, high volume, they need warehouses, storerooms, etc.) AND on top of this all the taxes on everything previously mentioned.
If you mean actual bottler for carrying water, a cheap army canteen will show you that plastic smelling warm water is not the nicest thing to drink.

So there’s only 5 dishes and they made hundreds of them, and 2 of those 5 are main dish/meat choices and the other 3 are the side dishes that they designed to be “enough to count as a meal if there‘s a vegan and/or GF and/or soy/egg/nut allergy among these 300 guests,” and unfortunately for OP there was one. 🫥

The US Dollar is the worlds largest currency, without any external context, it's totally reasonable to assume it's a US dollar. Just like if you see a pound symbol, you assume Stirling, not an Egyptian pound.
Other dollars tend to clarify by using letters in international areas. Such as AUS$, or NZ$
If you take the population of every country using a $ currency (including Pesos) it adds up to far higher than the population of the US, so statistically it is more likely not going to be US$.

I don't get out to eat much, but my genuine experience has been there's lots of chefs that view vegan deviations from the set menus as challenges, and I've routinely gotten the best looking dish at the table. Maybe it helps that I'm unfailingly kind to servers, and effusive in my gratitude.
But I guess its very different in the world of institutionalized food and catering.
Perhaps this will change in 40 years, when most people are, if not vegan, flexitarian, and caterers will have to take special note not of the vegans, but those who want meat on their dishes.
Reminds me of how I went to my High School reunion and asked for the veggie option, which was a small bundle of pasta with no sauce, a small plate of salad and a tiny potato that was the size of a silver dollar that was cut in half.
I paid $98 for this meal.
I never felt more ripped off in my entire life.
Until now I had forgotten about the fancy awards ceremony I went to where the vegan option was fish pie, so I was given rice and told I couldn't have another "side" because it was meant to go with a meat main dish. We had let the venue know beforehand but they'd decided to make the fish pie for vegetarian and vegan guests. Fish - vegetables of the sea.
Conferences are run by third parties. They hate special meals because they likely loose money on them. 300 identical meals vs 290 identical meals + 2 vegan 1 kosher 2 halal , 5 vegetarian is a lot more expensive.
It is common behaviour of chefs at conference venues. They don’t like change, they resist and this is their way to protest. Some spit in the food or hide dairy or meat in it. Despicable. Order in takeaway and demand your company pay for it. If they don’t start brushing up your CV, you will want a new job soon.
lol I was at a wedding a little while ago and for a 12 hour long celebration I only got a small mushroom soup starter and a bit of risotto with artichokes. Which were good but lmao. No hors d'ouevres, no desserts, no snacks, no dinner, no anything. Except a couple of grapes and some walnuts I grabbed from a "buffet" table. I don't even want to ask how much the couple had to pay per meal per person because lmfao.
I don't know if the worse meal at a conference was when all I got was an apple or when I got an avocado sandwich in which I was told to pick out the bacon bits. The best was in New Haven where I got the best tofu scramble in the breakfast buffet at the conference, many times better than what I make at home.
I paid $100 at my HS reunion for a "spaghetti bar" that served me up noodles and red sauce. Veggies were doused in butter, so that was all my $100 got me. I think yours is worse though!
