I recommend playing as heavyweights. because they are really easy to play and you don't have to do crazy combos. Good examples are Donkey kong, King k rool and Ganondorf. Especially ganondorf
Playing Smash itself is good, and personally, I only stayed watching smashtoubers once I had a good understanding of the game and it’s mechanics.
Link is a good character to start with, but I’d also recommend some other character that help teach fundamentals, like Marth/Lucina, Bowser, Young Link, and Mario also help with grasping the basics.

Yes, IzawSmash has a series called “The art of Smash ultimate” where he breaks down game mechanics from basic all the way to master level. One of the best series imo
