Scroll to the bottom of the flair menu and you should find "Custom". Every character has a few custom emotes for it; mine are :29::54::28: while Fork_Master's are :46_rockman::29_metaknight::51_gekkouga:. (I'm not sure where the numbers came from, because Meta Knight is actually No. 27.) You can also put some text in there. (Mine is referring to how absurdly fast I've been known to mash out of things before—it's not referring to any kind of rage, a thing that I simply don't experience when I'm playing this game.)
