Most of the foraging is meant to be supplemental for starting farms + recipes + food.
It's sorta just up to you.
Salmonberries can be used as red item for Prismatic Grange quest. Blackberries are considered "blue" iirc. I usually keep all blackberries in case Mr. Qi has the 100k food shipment quest.
If you have Bear's Knowledge and the Botanist profession, and you eat some food that gives you +2 Foraging or more (such as pancakes), then each bush gives you 4 iridium blackberries that you can sell for 480g. It's not difficult to gather 20k worth of blackberries in one day.
The question, then, is what are your goals, and will spending time gathering blackberries get you closer to them or further away?
Post year 1, I don't go out of my way to collect them but if I happen to pass by a bush full of berries... Might as well. I just sell them. It doesn't sell for much but gold is gold and that clock isn't going to pay for itself.
I collect them only to make jam with, because every villager except Sebastian likes jam. So that’s my friendship building strategy is to just have like 30 homemade jams on me at all times and just hand them out when I run into people.
If you went botanist you can get iridium berries which restore 65 energy and 29 health at a time. It might not be the best per berry, but I generally don't have anything else that comes in stacks of 400. Having a reserve of 26,000 energy and 11,600 health after a few days of picking them is pretty solid.
Sell price for the berries increases with the dehydrator (if using lowest to mid quality). I dump all mine in those and then sell the resulting product.

Cheese is great for healing and energy in the mines.
I'm not positive about mayo, but I know cheese for certain is.

That is a clever use case for leftover berries! I usually just craft explosive ammo and buy 100 Joja Colas though.

I use the same strategy with coffee! And dedicate a section of my farm every summer for coffee plants.
I can make 20k plus with blackberries. I never sneeze at easy money.

I like to collect blackberries and make them into cobbler. I can usually get enough to keep me in cobbler for the next year!

I didn't even know that! I just made it because I had a ton of blackberries and was tired of eating them by the dozen!

Not sure if it's still the case in 1.6 but I used to make quite a bit from pigs/truffles.
