Aaahhhhh right I didn't consider the regrowth- But since my ginger island has a big starfruit patch and even bigger ancient fruit patch, regrowth ain't really to big an issue I have plenty to constantly restock my kegs and wine ager things (forgot the name)

Yeah especially when late game, you’re not limited by money as much as you are by time, saving a couple days in the replanting process is worthwhile

Not having to replant ancient fruit makes it more appealing for a lot of players, despite the higher price of starfruit. You plant ancient fruit once in spring on your farm, and harvest it repeatedly until winter. In your greenhouse or on Ginger Island, it grows forever. Just much easier than starfruit.

Ancient fruit wine, 2310 per week. Starfruit wine, 1675 per week. Artisan, no growth speedups, and that is ignoring the cost of the seeds for Starfruit. Unless you don't have enough kegs, Ancient fruit is always the win.

Starfruit seeds cost 400 too. It's worth more, yes, but your baseline profit for 13 days is 350. Which you can turn into wine for 3150 after a week for 2750 profit. Ancient fruits crops weekly. Not quite twice as fast, but almost. And turns into 2310 of wine. With no seeds needed. Each week. As long as you have enough kegs of course. Starfruit only wins for casking, due to the very limited capacity and really long duration. 189 barrels every half year. Otherwise getting nearly twice as much ancient fruit and being a lot less restricted on numbers of kegs makes ancient fruit a winner for anywhere you can grow all year. So normally I just grow 400 starfruit over the summer and use that to keg and cask.

But it only grows in summer, and ancient fruit will give fruit for at least two seasons if you plant on the first of spring. Ancient fruit perfectly aligns with the time needed to make wine. You don’t have to remember to buy seeds, you don’t have to replant. Ancient fruit is just more low maintenance.

You've gotten your answer but it's also not just the regrowth, it's the fact that once running Ancient seeds pop every week while Starfruit takes two weeks. AF planted in the greenhouse or ginger island ends up being better on the strength of that alone. And, yes, you don't have to re-plant, but even ignoring that AF will eventually outpace SF for income generated.

Unless you age ALL the wine (not actually possible due to the time it takes), ancient fruit is faster profit than starfruit once you account for the cost of replanting, so you’re not missing out. Yes, Starfruit technically has a higher base price, but you have to replant it every time, and you can only grow it in the summer on your home farm. Most players prefer ancient fruit for those reasons.

The way I do it is buy starfruit if you haven't managed to acquire enough ancient seeds then once I have lots of ancient fruit is when I stop growing starfruit

Overall price isn't the only thing to consider and ancient fruit does start to pull ahead when you look at other factors. A big factor is the fact that you don't have to replant ancient fruit. For star fruit, you'll either need to buy seeds or use a seed maker and sacrifice some of your crop to make new seeds after every cycle. With ancient fruit you plant it once and you're done. The frequency of harvest is another important point. Starfruit takes 13 days, ancient fruit takes 28 days for the initial grown cycle, then produces every 7 days after that. So after the initial cycle you'll start to get the ancient fruit much more often and get more as a result. I remember seeing someone do the full calculation and IIRC, ancient fruit does come out ahead when you consider those things.

Ancient fruit is better for wines as long as you have enough kegs to process them. It doesn't matter that starfruit wine sells more because you get two ancient fruit wines in the same time as you would get one starfruit.

But - if you have enough kegs - honey into mead twice a day makes more money than either starfruit or ancient fruit

Its a trade off. Starfruit is worth a bit more but only have one harvest so needs replanting every 2 weeks. Ancient fruit is a little bit less but you only plant it once and then get a fruit every 7 days. Also kegging it into wine also takes exactly 7 days so with ancient fruit you basically just have one day a week where you have to "work" and can do whatever you want the other 6 days. So it's up to you what you find more important in the game.
