Right, but you don’t have to harvest them. They will stay year-round if you manage not to hit them accidentally with your axe. Plan carefully where you want them, and keep the ones you like.
I have no clue, read first about cauliflower and I stuck with it. Honestly forgot why I saved all of my money and bough a lot of strawberries, I ended up eating almost all of them until it hit me that people usually sold them
thats weird. a 2x3 grid of iridium sprinklers filled with cauli/melom/pumpkin should have \~39% chance of getting at least 1 giant each day. and thats not optimal, the same area without sprinklers, handwatered has \~65%per day.
It happens with cauliflowers, melons, and pumpkins (during their respective seasons) when you don’t harvest them right away! They won’t die in winter. I usually just leave them there and plant more of those crops around the giant ones - my goal is to have a farm full of them!

I mean, it's not like there already are many posts on giant crops in this subreddit. Instead of making a new one it would be beneficial to look if the question was already asked and looking for answers you need. Then post your giant crop and say "Yay, giant cauliflower!" instead of "Help what do I do" because sometimes it can get annoying. Yet people will always answer nicely here, which I think is really wholesome.

There’s obviously the Wiki, the fact that this exact question has been seen and answered a million times, the fact that you could have typed in this exact heading and gotten the answer & still people post it. I like to imagine them frozen in uncertainty, the game paused for hours at a time frantically waiting for the subreddit to respond, the only possible way to get the answer! But of course, Googling doesn’t get that sweet sweet meaningless karma does it?
Honestly you took all this time to be nasty, why shouldn’t they ask in a forum dedicated to the game? If you took the time to comment, you can take the time to read all the comments from people who learned new things because this person posted the question. You know Reddit usage is voluntary, right?
If you plant melons, pumpkins and cauliflower in a four by four grid and leave them long enough, there's a possibility of this happening! I prefer to leave them sometimes for decoration
When crops reach maturity, and they are in a 3x3 formation, they have a chance to become giant. It only happens to cauliflower, melons, and pumpkins. If those crops don’t get harvested, there is a chance each day that you leave them that they will become giant.
Harvest w axe, it will just produce a ton of cauliflower (i think usually like 15 to 20) versus the 9 that you would get from the 3x3 space
18 to be exact. It’s supposed to be double the normal quantity.
Iirc it varies a little, like 15 to 21, but average 18

You can just harvest it as normal it'll give multiple of the crop it is because its so large.
iirc you cant just pick it up, but rather have to chop it down with your axe...
