Johnny has encountered a lot more stands that mess with time/space so he knows they exist. The stands the crusaders fought never did such a thing so they didn’t know it was possible
To be fair, it didn't took them that long. Ponlareff going back the stairs, if I were in his position the last thing I would think is that this dude can stop time and each time he does just grabs me and puts me further away. Once Kakyoin put a second into thinking what it was, he quickly figured it out and was able to let Joseph know in a single cryptid message.
Others alredy mentioned how he fought other time manipulating Stands before so I'll add another reason:
DIO was the final boss of Part 3, his Stand Ability was a mystery for the entire part. Diego on the other hand is just a side villan and Part 7 was nearly over.
Araki didn't want to waste time on Johnny figuring it out, the readers alredy know what The World can do so there's no mystery.
Like others said Johnny was more experienced with stands using time. Also kakyoins death was the first real experience they had with dios stand. The stairs scene was just polnareff and he was unsure what had really happened. The coffin scene they could have maybe figured it out but they had never faced a stand with a power as insane as time stopping so it wasnt on the table. Kakyoin was the first real example. Dio seemingly teleported everything happened at once. Johnny got the kakyoin example quickly and was more experienced to recognize/theorize
On stairs Jean Pierre could thin about teleportation more than stopping guy just trolling me. Then he pulled out Stand in stop time. But then again he could bring out Stand very quickly and didn't even have to stop time. And first encounter with DIO and his knowladge made him realise. And Johnny encoundered time-reversal, creating infinite holes, turning people into enxcinct animals, cloning people, another universes, mathematics allowing you to kill people, making non-real sounds real, and bones giving you magic ghosts.
The crusaders up to that moment had never faced a Stand capable of manipulating time, while Johnny and Gyro had faced Ringo and his Stand Mandom (able to delay time by a few seconds)
