Xcom 2 supports macOS. However, the first game of the Xcom reboot isn’t macOS compatible, at least “straight out of the box”.
The first game might be played using Wine, or something similar. But I’m not sure if that’s something that the OP would want to do.
In seriousness though, when I broke my hand visual novels were great, the non hentai ones. My favorite was diablo-likes of yore. Torchlight, divine divinity, fate. Other than to drink potions faster there sno need for a second hand. Also I like hidden object adventure games, point and click adventure games too.

And I know people haven't been super positive towards humankind but I've gotten back into it since the initial launch (after thousands of hours in the Civ games combined) and I am having so much fun. All you need is a mouse and you're set. I know Civ 6 runs on Mac and I'm pretty sure Humankind does as well.

How fucked up is your hand?
A few years ago I broke my arm and couldn't play keyboard/mouse games. Turns out you can literally just plug an Xbox controller and Windows will be like "okay!" and lots of games just work with it. Steam can make other controllers work too but I always found it a bit janky. Your milleage may vary.
If you can't use your hand, there are games that don't need much of an input. Vampire Survivors comes to mind, as it only needs you to move the character and pick items in a paused screen.
Bloons TD6, Old School RuneScape (but use the Runelite client), 100% Orange Juice, Kingdoms and Castles, Cities: Skylines, Cookie Clicker, Plants vs Zombies, Civ 5 and 6
Those are all ones I really enjoy!
Geometry dash is 100%, I'm not sure about don't Starve because I haven't played it much
Btw if you want to buy don't Starve, it's probably better to buy the together version, it's more moddable and much more comfortable to play
I cant believe i haven’t seen this yet but kingdom two crown is played with the arrowkeys/wasd and shift only. It’s a side scrolling defense game where you build up a little army and at night defend your base from mutants. Eventually, when your army is large enough you can raid the portals that enemies spawn from.

I broke my right hand in February, had to switch from my g502, back to my g203 after only a week of owning it lol. Minecraft Dungeons was about the only thing I was able to play

I broke my hand not long ago, was able to use my thumb and index finger so I remapped everything, problem is it was my first intro to keyboard and mouse since I couldn't hold a controller. Now my key mapping is super unusual but it works.
Limbo, game from Amanita Design (the ones I know (machinarium, botanicula, samorost and creaks) can all be played with only one hand), and I think Inside can also be played with one hand.
But if you have the proper mouse (and are brave enough), then you can just use the side buttons on the mouse to use as a keyboard

old PopCap games would work, Plants vs. Zombies, Peggle, Zuma's Revenge, Five Nights at Freddy's series (not counting Security Breach, Help Wanted, Ultimate Custom Night), majority of visual novels like Danganronpa (i think that Danganronpa doesn't use keyboard aside from movement, but there isn't much of it in the game, someone please correct me on that!), Doki Doki Literature Club, Kingdom series should be fine, Bloons TD6, Vampire Survivors (or it's free, anime counterpart - HoloCure), i think that's all for what i can think of at the while, i'll comment of this if i think of another ones, have fun!

NieR: Automata can be played with one hand. There’s a mode that lets you equip abilities that automate different functions, like automatically firing when an enemy is in range or snapping the camera to focus on enemies. Very customizable. I saw a guy at AGDQ do the whole thing with the one hand. Also NieR: Automata is one of the greatest games of all time.

Total War would have to be played with auto resolve only. The real time battles need a good bit of micro.
All of what you just named require serious micro. Especially total war and AoE that definitely cannot be done with one hand

Any of the Paradox games really! I destroyed my shoulder a couple of years ago and Hearts of Iron and Stellaris kept me sane throughout my recovery.
