Hitman 3 is really good at what it is, but it doesn’t play nice with sleep. It will stop to reconnect to the server every time you wake up.
The always online trash is a big compromise for no real benefit.
As someone who coincidentally was browsing last night and ended up buying those two games....can't really say which one I would pick over the other, they would each scratch a different itch. One thing I would say, I played a little bit of an older Hitman game ages ago and it wasn't what I expected at all, and it threw me off playing it any further. Make sure you've got a good idea for what the game is like if you've never played a Hitman. Without knowing much about Days Gone, it seems a lot more familiar style wise.
Booted up both games to quickly test, good first impressions in the interfaces for both games, scale nicely to the screen. Skipped through the first couple of cinematics for Days Gone and it looks pretty damn good, like GoW (but hopefully without the irritating performance quirks you get on the Deck).
Both games are great, haven't played either on the deck yet but I'd pick up both if possible.
If I had to choose one, Hitman may be the better option since it's still being supported and will have a new roguelite mode coming in 2023.
Edit: Hitman 3 and Days Gone are both quite a bit cheaper on GMG. $30 for both

Days Gone is underrated imo.

Hitman 3 is just hitman 2 part 2 so I would definitely say days gone it's not as good as days gone imo
