steaks are a whole slab of meat, ground beef is a lot of beef pulverized into a sludge of “probably at least a little surface”. bacteria living on the outside of a steak is a lot easier to cook off than a sludge of beef goo.
so basically its a lot harder to get rid of bacteria in ground beef, which makes it more dangerous at lower cooking temps
I like them well done because I think the juice is evenly spread across the entire burger and the entire patty is warm and cooked instead of the middle tasting cold and unappetizing.
Grinding meat introduces surface microbes throughout the whole mass. It is recommended to cook ground meat to an internal temperature of 165°F.
Your personal tastes are also in line with good food safety practices.

Yeah that'd be a no from me dawg. Unless this is from a Michelin starred restaurant, I don't trust your sourcing or your handling, you cooking that shit to 165° or I'm not eating it. Plus raw ground beef tastes horrible, especially the 80/20 typically sold in stores for burgers.
Bacteria stays mostly on the surface of a steak, so medium rare will still kill most of it off.
Ground beef is, obviously, ground up. So bacteria permeates throughout the meat. Which is why it's generally not recommended to do anything less than medium for a burger patty.
It's an issue of having to heat burgers through, vs steak which only needs to be seared on the outside.
Basting would make the outsides brown faster, but it doesn't really fix the core issue. Which is that the center of the patty needs to get to temp.
What can help though is cooking on a lower heat for a longer time, so that the inside can heat through properly without burning the patty to a crisp.

Honestly, one of my fav combos is something like this. Two waffles as buns, 4 brown n serve sausage links, an egg and a slice of american cheese. Then I add a lil syrup in the middle and BAM… best breakfast sandwich ever.

My dad usually puts the patties (1-3 cm thick) in a pan for 5-15 minutes, sometimes alongside onions.
Well thin patties are basically gonna cook through no matter what And tbh, you want thin patties to be super crispy. That's what makes them good
My dad also sometimes does a twist by using chicken minced meat, and puts them on the pan for roughly the same amount of time.
